The Chianti was only in the movie. The book had… some other, more sophisticated wine, don’t remember what. No, I don’t know what that means either, but according to wine snobs, Book Hannibal [del]had better taste[/del] had a more refined palate.

Upon further thought. It turns out that people can detect the major histocompatibility complex, an important component of the immune system by scent, and it affects whether they find someone attractive or not. So, wild speculation time: Scent is a component of taste, and the different “races” might just have enough of a consistent difference in their MHCs to lend them a different taste.
