Homemade roasted pumpkin seeds seem to have thinner and crispier shells–I’ll eat them whole. (Chewed first.) Commercial ones, I don’t. Part of the enjoyment of pumpkin seed eating for me is all the fussing with the shell and my tongue, etc., though.
I eat the whole punkin seed, by the bagful.
That being said, the pumpkin seeds you buy in stores are not seeds from jack-o-lantern pumpkins, them come from a squash specially grown for the seeds. Jack-o-lantern seeds are edible, but they are tougher.
Whole. Plus, I eat sunflower seeds whole and probably about 25% of the peanuts I eat are with shells.

So it IS from another type of squash! I was right!
Whatever the case, I am still sad I cannot get the jack o’ lantern type pumpkin seeds unroasted in stores near me.
