My father’s side of the family is Cuban and I have memories of eating a delicious breakfast which consisted of fried eggs topped with a tomato sauce concoction that also included bell peppers and onions (if I’m remembering right), amongst other things. Does this dish (or rather, the tomato sauce) have a particular name? I’ve found a few recipes that may be it when I searched for “Cuban eggs tomato sauce” but I’m more curious as to whether the tomato sauce mixture has a specific name which would yield better results.

It’s the base of many, many Puerto Rican recipes, and the cuisines are similar. I make it often.
Hmm that could possibly be the base of the sauce (with tomato sauce just added). I’ll have to try it out! I’m sure my unsophisticated tastebuds won’t notice any difference as long as tomato sauce, onions, and bell peppers are in the mix. Thanks for the recipe!
Yea. While most recipes for sofrito call for tomatoes, I pretty much always use tomato sauce instead. Works just fine, and is actually my preference.
I believe this dish is called “Huevos Habaneros”, named after the city of Havana (Eggs in the Havana style, Not to be confused with the Hot Chili.), or sometimes just “Huevos en Sofrito”.
It seems to be a close relative of Huevos Rancheros.
