The Magill brood dyed eggs this year, so I now have two dozen hard boiled eggs to consume. I’m going to use one dozen for deviled eggs, and the second doex for egg salad.
I’m going to do a simple recipe of eggs, green onions, mayo, and dried mustard. (Salt and pepper to taste)
I love egg salad.
When faced with the choice of saving the world or eating the sandwich, I go with eating the sandwich every time.
There’s this sandwich place by my house. Its been around for something like sixty years, and it’s open every morning - mornings only - from before daybreak to 10 AM. All they serve is sandwiches on freshly-baked rolls and weird juices they mix themselves.
Anyway, this place has the greatest egg salad sandwiches in the history of the universe. They make other sandwiches there, too, but the first one I ever ordered there was egg salad, and I’ve never though to order anything since, because how could it improve upon perfection?
The odd thing is that I don’t even like egg salad.
