Egg substitute?

I’m trying to make a cake for German class, but someone is allergic to eggs. He apparently can’t eat Egg Beaters (Hmm, I thought those were OK?), but says that his mom uses something in a package with chinese writing with potato starch, and some other starches that, when reconstituted with water, form an acceptable egg replacement for baking. What is this called, and where would I have to go to get some?

When I was vegan, I used Ener-G Egg Replacer. It worked pretty well for a lot of stuff.

There’s also one that’s made out of prunes, but I can’t recall the name.

That’s crazy… I went to our organic food store, and it was right there. Same brand and everything. I wonder when we’ll get reconstitutable everything, for people allergic to it.

You’ve already been answered, but I thought I could add a few other options for tose who want to make eggless baked goods.

You can boil flax seeds in some water until a mucousy gook forms. Then you either strain the flax seeds out or just pour them in the thing you are making. I don’t know proportions or how much to use, but you don’t need too many seeds to equal an egg. Experiment. One warning, you can kind of taste the flax flavor if you look for it. It’s Ok but isn’t always nice.

If the flavor suits you a mashed up banana substitutes well for an egg (good in chocolate chip cookies).

A friend of mine discovered that if you boil a small amount of cinnamon in some water it also produces a nice eggy thing that seems to work as an egg replacer. It adds a very light cinnamon flavor to her chocolate cake, which is nice (I’m talking very light, I wouldn’t have known if she hadn’t told me).

I also give my support to the egg subsitute already mentioned, it works quite well and doesn’t really add much of a flavor to the baked goods. It kind of lacks the egg-y flavor of eggs though, and the other substitutes can add a very nice flavor that is different from eggs but still good.

Unless I’m thinking of a different product, the reason Egg Beaters aren’t ok is because they are eggs, just without the yolks and already all beat up.
