Need an egg

I was about to make a lemon pound cake when I discovered mr. singular had boiled the last two eggs in the fridge. Is there any way to use a boiled egg in a recipe requiring an egg?

Use a tablespoon of mayo. Not miracle whip. My MIL taught me that.

Yep! Mayonnaise (real mayonnaise) is the perfect substitute for egg.

Heh, ok, figured this out. To me, “real” mayonnaise is something made fresh, from scratch, using eggs.

I think they’re comparing Hellmann’s or Duke’s (“real mayo” made with eggs) to vegan “mayo” or vegetable oil-based Miracle Whip.

You can also replace egg with a teaspoon of flax meal mixed in a third of a cup of boiling water, for future reference.

Some people also do 1/4 cup of applesauce per egg. I’ve done cake without an egg substitute, and you still end up with cake. The crumb will be a little different and more crumbly, but it’ll still come out even if you leave the eggs and egg substitutes out.

One evening I was waiting for an egg to be laid so I could finish cooking dinner. There was a hen in a nest-box, and I kept running down and checking under her.

When my gf got home, she had a dozen eggs from the store. She asked which hen I’d been waiting on and I described the chicken. “Oh, that’s Priscilla, she hasn’t laid in years”.
