Eggplant

We’ve been swapping eggs for eggplant with a neighbor. The other day, gf stuffed some with ground lamb, then baked. Yum!

Tonight I’m solo, and was gonna slice one up and put the rounds on the grill, along with a steak.

Other than oil, what would you season these with?

I’ve grilled them before, then served them cold drizzled with balsamic vinegar.

I’d recommend just a little bit of salt in addition to the (presumably olive?) oil. Delicious.

Grate up some Parmesan cheese on top after grilling.

Olive oil was a given. I’ll salt and pepper. We have some really good hard cheese. Not parm, something my gf picked up, I thing it’s sheep origin. Starts with an “M”?

I keep trying to grow eggplant without success, but I’m beginning to suspect the directions are faulty:
Step 1) Plant an egg.
Step 2) ???
Step 3) Profit!

Do the same thing, but add some chopped fresh basil and a touch (or more ) of garlic. It’s best served a little warm, but not hot enough to completely wilt the basil.

I like to stick slices under the broiler with goat cheese or pesto on them. Easy and tasty.

While you’re out there, slice up and grill an extra eggplant, then tomorrow (or whenever you’re ready) pull off the skin and blend it with a (smallish) garlic clove, some tahini or sesame oil, salt, pepper and a squeeze of lemon. Baba ganoush! Great with carrot sticks, pita chips, smeared on a sandwich…

Yes! Been there and forgot my way.

Olive oil, salt, pepper, garlic. Doesn’t really need anything else. Even the garlic is optional.

Garam masala is great on eggplant in conjunction with olive oil and salt. Add cayenne if you want to spice things up a bit.
