Evening all. Been a slow day, except for a quick trip out to procure dinner, been inside all day, the Dristan is wearing off but I don’t want to take the next 12-hr dose until I head to bed, So stuffy nose. Not much accomplished, but there is always tomorrow…

We envision some yahd irk today but that may have to wait a while as it rained some overnight so yahd is all wet. Tonight I have a meetin’ for CDI as my local team needs to firm up our presentation for CDI next weekend. Rah. We shall go partake of the geezer special at the [del]hog trough[/del] Golden Corral for sup.

Overcast this morning, the start of a 2-week stretch of forecast dreariness. I need to organize the fridge - I found a science experiment that used to be leftover kidney beans. Who knows what else might be in there?? :eek:
Other than that, just another glorious day in retirement, wrangling the toddler.

I’m feeling a disturbance in the force.
Yesterday, everyone at dialysis was running around with their hair on fire, virus related, of course. Having me stuck in the waiting room for 45 minutes is not going to lower infection rates, people. It was 9PM before I got out of there, rah.
This morning, I went to get breakfast at Sonic, and they were closed. On corndog day. All of the locations south of Boston came up closed on the app. This is NOT a good sign.
And now the app shows them open. I guess breakfast will be dinner tonight.
As long as it isn’t trying to mate with the cottage cheese yet, you should be alright…
Morning all. Only slept until 8am today, feel better but still need to take it easy. Just ate my big bowl O’Cheerios and need to call and schedule my Annual A/C service (yes, it’s only 64F here right now but when it starts getting hot you want that A/C ready to go). Rain tonight and tomorrow are in the forecast.

I was a little rushed when I posted last night. Let me see if I can add more detail, and put it into a format in case someone wants to add it to a cookbook.
Crispy Beef Stir-Fry
[ul][li]½ pound to a pound of beef round steak, ½ inch thick and cut into ½ inch wide strips. (Cut strips into pieces about 2" long – or more.)[/li][li]1 green bell pepper, chopped into 1 inch to 1½ inch squares[/li][li]2 or 3 stalks of celery, cut diagonally into ½ to ¾ inch bits[/li][li]½ to 1 yellow onion (amount proportionate to bell pepper and celery), chopped into 1 inch to 1½ inch squares, separate segments[/li][li]1 or 2 cloves garlic, minced[/li][li]Sesame oil[/li][li]Bottled stir-fry sauce (e.g., Kikkoman)[/li][li]Cooking oil, such as grape seed oil, canola oil, vegetable oil, etc.[/li][li]Red pepper flakes[/li][li]Cornstarch[/li][li]Salt[/li][li]Pepper[/li][li]White rice[/ul][/li]
Put enough cornstarch to coat the beef into a bowl. Mix in salt and pepper to taste. Coat the pieces of beef in the cornstarch mixture, and allow the cornstarch to be absorbed. Coat with more of the cornstarch mixture if it looks too thin. Heat a couple of inches of cooking oil in a pot over medium-high heat. Cook the coated beef, in batches, in the oil until crispy. Drain on paper towels.
Chop the celery, bell pepper, and onion. Heat a 1 or 2 tablespoons of sesame oil in a large frying pan. Add the vegetables to the pan, and season with a pinch of salt, a little pepper, and red pepper flakes to taste. Stir-fry until they are somewhat tender, but still crisp. Add the garlic and stir-fry for a minute. Add a couple/few tablespoons (maybe ¼ cup) of the stir-fry sauce.
Add the crispy beef to the vegetables and stir, ensuring everything is heated. Serve immediately over cooked white rice.
Yield: 2 to 4 servings, depending on the amounts you use and how hungry you are.

Back from lunch - Roxy wore herself out at the McD’s playground, tho her favorite part was the touch screen with the balloon-popping game. She’s napping now, so I think I’ll knit for a bit. The quiet is loverly!
Packed up and donated about 15 Rubbermaid tubs of various sizes to the Downtown Rescue Mission store. That was the major project for the day, so nappage is planned and may (or may not) be coaching soccer around 5pm (weather is the determining factor).

My boss emailed to say she’s taking a vacation day. Then she sent another email to see if I got her email. (Apparently, she’s having trouble getting into the irk email, and is using her personal email.)
It only took two hours to get to the orifice today. :eek: Coronavirus is good for something, anyway! It only took two hours to get home on Tuesday. Hoping for a quick trip home today. Since I got to the orifice at 07:10 instead of 08:00, my boss said I should leave early. We’ll see.
The NHL has postponed the season. Now I have to find something to do on the weekends.
