My Irish grandmother used to make this dish-it was called something rthat sounded like “prockeen gowl”.
It was potatoes, turnips, carrots, parsnips, cabbage diced up and fried with bacon.
It was a good way to use up leftovers, and tasted pretty good.
If you were British, I guess it it would be called “bubble and squeek”.
Anybody know what the gaelic name meant?
