Help me make a foodie appetizer from this childhood snack

This was a staple of party foods at my house growing up.
Ritz cracker, american cheese, slice of pepperoni.
Make a plate of them and then microwave it for 10-15 seconds. Enjoy.

I am making some snacks for a friend’s going away party. I recently bought a load of longaniza sausage. I had the idea of using the sausage in similar way to the pepperoni.

Does anyone have ideas for a cheese that goes well with longaniza?

Or a high-end cracker that might work well for the base?

Little squares of puff pastry or a few layers of buttered filo would make a good base, but you’d have to use a real oven instead of the microwave.

Any high-end cracker would work; so would those little loaves of tiny slices of bread. Provolone cheese would go well.

WOW We ate the same thing here in Hawaii, except we did not have a microwave.:wink:

We also ate tunafish made with mayo and cream cheese on saltines.

Pan frying the sliced longaniza will help reduce the fat.

My only suggestion in addition to the excellent ones you have already received would be to use puff pastry as the base but instead of laying the sausage and cheese on top, roll the puff pastry into a rectangle, lay the sausage and cheese on top, then roll it up (jelly roll style) and slice it into “wheels” (like cinnamon rolls!) then bake in a real oven. Easy, tasty, and in a pinch “fancy”. :wink:
