I tried this yesterday with peanut butter. Strangely, it kind of works.

Some people find creamed chipped beef on toast disgusting, but I am a fan.
Turkey (real turkey, not processed roll), cream cheese, and strawberry jam on a roll is good.
Almost any sandwich can be made better by inserting potato chips or french fries in on top of the filling.
You can buy frozen CCB (Stouffer’s, I think) that’s really pretty good. Add a little spice if you like. I keep that and “Perfect Portions” frozen biscuits in my freezer for emergencies.
Oh yeah, sandwiches.
Those sissified cucumber sandwiches are actually yummy.
They are in fact very yummy – I don’t know that they are worth $40 at Brown’s or whatever, but cucmber plus cream cheese on white toast is a not-bad snack.
Rent the movie Spanglish on DVD. At one point, the main character - a 5-star chef - wakes up in the night to make himself a sandwich that looks absolutely to die for. I was delighted to see after the movie that the special features contain the recipe and directions for making the sandwich. Plus, it’s a pretty good movie.

Mid Rare sliced Roast Beast, 2 slices of Swiss on buttered Pumpernickel, with a strong Horseradish Mustard.
An upscale rendition of an American, after school, classic, mini pizza snack. A split English Muffin. Top both halves with a drizzle of Olive Oil, a dollop of crushed Italian tomatoes, a sprinkle of salt and pepper. Next, top that with several slices of a fine cured salami, and then finally top off with either a buff mozz or a regular/smoked provolone. Take the mini pizza and put it under a broiler or in a toaster oven for a couple of minutes until the cheese is melted and bubbly and the English Muffin has crunched up, garnish with basil chiffonade and a basil cluster.
Ok, here’s one I’m groovin on.
Spicy Buffalo Stilton Sandwich
2 breaded Chicken breast cutlets (fried, deep fried, or baked)
2 Large fresh Sandwich Buns
1/4 lb of a good Stilton Blue Cheese
Firecraker Slaw:
2 stalks of celery julienned
1 carrot jullienned
1/4 of a fennel bulb jullienned
1/2 of a julliened apple or pear
Louisiana Hot sauce
Veg Oil
Salt and pepper
Mix the slaw and dress to your taste with the vinegary hot sauce and oil.
Assembly: Toast or warm the bun. Top the cooked breaded chicken with stilton and stick under a salamander or broiler until slightly melty. Slip into the bunbase and top with the dressed Firecracker slaw and the buntop.
I think a few rashers of bacon would just make it better.
How to make a real croque monsieur.
Make a dijon bechamel (melt a large tablespoon of butter, stir in about 2-3 tbsp flour until absorbed, cook on high for a couple of minutes, take off the heat, add salt, pepper, 1 tsp smooth dijon mustard, and a big splash of milk. Return to heat, stir until smooth, take off heat and add more milk - repeat until it’s about the consistency of mayonnaise).
Spread bechamel on two pieces of thick crusty white bread, and add several slices of cured deli ham. Close the sandwich, and chuck it under a grill until one side is toasted. Turn and repeat for the other side. Remove from the grill and spread more bechamel on the top, then top with grated gruyere. Return to the grill until the gruyere is brown.
This is my best estimate for what you get served in cafes in France. It’s delicious but incredibly filling. Top with a fried egg to turn it into a croque madame.

I’m lucky to have a world-class bread maker (Acme Bread) near me.
They also have a satellite shop at the ferry building in San Francisco. Grab one of the sourdough cheese rolls if they’re not out.
I cannot take credit for this sandwhich recipe, as I actually received it from **Rue de **Day, who used to post here regularly.
Peanut Butter, Honey, Banana Sannich
Take two slices of bread and lightly toast them.
Spread peanut butter on both pieces. Slice a banana the long way and arrange on one of the sides of bread. Drizzle that slice with honey. Top with the the other slice of bread. Grill as you would a toasted cheese sandwhich. Truly tasty.
There are some great sounding sandwhiches in this thread. I’ll be trying a few of these recipes!

Sandwich from my local deli (slightly healthier than most of the above!):
Grilled Vegetable Sandwich:
Grill a bunch of vegetables, not limited to: onions, red and green peppers, mushrooms, and eggplant.
Place a slice of mozzarella and a few slices of fresh tomato on sourdough. Add vegetables.
Grill sandwich.

Take several slices of Spam. Grill same. Place between toasted whole wheat bread with mayonnaise.
You are not alone. Might be just the two of us, but I doubt that.
My favorite sandwich is:
Crusty roll, split, toasted and spread with roughly equal parts :
Butter and horseradish (not horseradish “sauce”)
Portabello mushroom cap, sliced thin (so you have circular slices) sauted in just enough butter, for just long enough to melt the
Provolone cheese laid on top of the 'shroom slice
rare roast beef, sliced very thin
cucumber, sliced very thin
Tomato, sliced very thin
second favorite sandwich:
Sourdough roll, split
Sliced turkey or chicken breast
Guacamole, spread on roll thickly
Red onion, sliced very thin
Roasted Green chili (Anahiem, Big Jim, or Poblano) seeded and stemmed
Pepper jack cheese
I’m single, so sandwiches are serious business for me. 
A variant on an old Jewish delicacy;
Split and toast a real bagel (those giants from Noah’s are okay, but I prefer traditional), while still pretty hot smear on some softened cream chease, then layer on as many King Oscar Tiny Tot sardines as you like. Best eaten while the bagels are a little warm. Thinly sliced (shaved) onion is good here, but go easy. Sardines are mild.
