Looking at the dozen eggs in the fridge that’ll go bad in a couple of days, I’m contemplating scrambling the mess of 'em with some onion and peppers, rolling them up in some tortillas with cheddar cheese, and sticking them individually wrapped in the freezer to nuke on weekday mornings.
The only possible stumbling block I see is cooking, freezing, and then nuking the eggs; I’ve never tried it before, and I have no idea how they’ll turn out. The prepared frozen breakfast stuff from the store seems to do all right, but that’s full of preservatives and emulsifiers and shit.
So, has anybody ever tried freezing cooked scrambled eggs? Any tips?
