It was good enough to be a double post! (Strangely, however, it was not there when I posted my response to Sqrl!) Did you remember my old sig or are you just a Dr. Evil fan?

Sorry I’m late again. I got held up getting all of the ingredients. Okay, here’s the recipe:

Karyn’s Famous Nacho Dip

2 large cans of chili(I prefer Hormel’s)
1 Velveeta box
1 large jar of salsa (I prefer Old El Paso Mild, sometimes Medium)
1lb of ground hamburger, sauteed with onions
1 can of diced tomatoes (optional)
Hot sauce to taste, if desired ( I have kids, so I don’t usually)

First, brown the ground hamburger with the diced onions, until onions are translucent and meat is well browned and in small pieces. While that is cooking, cut Velveeta up into chunks and put in warm crockpot to start melting. Drain the hamburger/onion mix, rinsing with water if reduced fat is desired. Add to melting cheese, stir if possible, and let continue melting. Add both cans of chili and the salsa and tomatoes slowly to mix in crockpot, stirring frequently. Continue to check dip until cheese is completely melted, stirring several times, about 30 minutes, depending on the crockpot. Serve with dipping nacho chips. Enjoy!

Let me know how you like it! Oh, and thanks for saving me some room here for the crockpot. I’ll just set it down right, grunt here. Whew!

You sing in my consciousness like a counterpoint to my life.
