Looks like Toronto has a ton of these. Also food/cooking classes could be fun. I saw a Toronto one on bbq which sounded neat.
They’re all over the States, too, and are called “escape rooms.” It’s essentially a game where you and some friends are locked into one or more rooms and must solve puzzles to escape; they have a theme, like “escape from the Wild West jail” or “flee the zombies.”
Does she enjoy watching birds? How about a really nice, big birdfeeder, and some birdseed to fill it? A new birdbath, maybe?
An overnight babysitter/petsitter and a night at a hotel that has a hot tub in the room, room service and buy a movie.
If you want to spend on something she can keep besides a memory the bathrobe would go well in this theme.
Aromatherapy diffuser and set of essential oils. Or with her liking to walk, maybe a fancy pedometer or fitbit type gadget if she doesn’t already have one.

What about signing her up for a class of some sort? Pottery, cooking, archery, horseback riding, anything you think she might like to do but hasn’t ever had the opportunity to try.
