Ideas for party sandwich fillings?

The big ones used to secure barbed wire to fence posts.

My favorite rolled yummy bites:

I pkg artificial crab
I pkg frozen chopped spinach
1 jar real bacon pieces
1 small can water chestnuts, chopped
1 bunch green onions, chopped
1 pkg ranch dressing mix
1 cup sour cream
1 cup mayo

Flour tortillas

(Note: I use lowfat sour cream and mayo; with the ranch mix you can’t tell the difference)

Mix all ingredients except tortillas, spread on tortillas and roll jellyroll style. Slice into desired thickness, top with freshly grated black pepper.

Humm - well maybe I’ll see if I can hunt down a good cajun egg salad recipe - I don’t want to have too many fish heavy selections.

So, that gives me:

Cucumber Cream Cheese
Smoked Salmon
Cajun Egg Salad
I wonder if I could come up with something with peanut butter - it tends to pack well.

I prefer green olives to the pickle in the first one. And I like it on rye bread, if I can get it. I make tuna salad with mayo, mustard, and pickle relish. Sometimes I add a hardboiled egg, as well.

I always use lavash, or large flour tortillas. Lavash is easier because it’s square.

Nutella and strawberries
Hummus, lettuce, tomato, falafel
Goat cheese, caramelized onion, fig jam, basil, and prosciutto
Prosciutto, arugula, Gouda, and caramelized pear

So alice - how’d it go? What did you end up bringing?

I know I’m late to the party, but here are a couple of thoughts.

Give any of the soft-filling sandwiches some crunch by cutting some carrots or celery into strips and lining them up along the near edge so they end up in the centre of the roll.

PB/banana is good, but PB/banana/marmalade is even better. Make sure to use good Scotch-style marmalade made with Seville (aka “bitter”) oranges.

To go with the sandwiches, you could make a rolled potato salad: Mash potatoes and form into a rectangle on waxed paper or foil or whatever, then mix everything else, spread that on the potatoes, and roll it up. Chill, and serve by slices.
