Oh well, as long as there’s a ton of extra crispy bits, I’ll be happy. After all, fried chicken is all about the crispy bits, isn’t it ? I’d sure be happy eating the crispy bits only, especially if they’re deliciously salty.

Thighs are definitely the best. More meat than the drumstick, more flavor than the breast.
I pan-fry up some chicken maybe every three months – empty nesters, and the Ukulele Lady wouldn’t THINK of eating fried chicken – and since I’m the only one eating it, I’ll just do four or five thighs.
(When Little Pianola and Little Banjo were at still home, I’d cut up a whole chicken. But I’d cut the breasts halves crosswise twice, to make six small pieces of breast. The only way to get any flavor into those stubborn chunks of white meat.)

I love them for their skin-to-meat ratio. I love crispy chicken skin, and, to me, the loveliness that is the chicken wing is that you get a bit of that chicken crack with every bite. If you don’t like chicken skin then, no, the wing is not for you. That’s why I don’t get this “boneless chicken wings” stuff. It’s missing the exact thing that makes a chicken wing so great! They are not simply hot sauce delivery vehicles (not that there’s anything wrong with that.)
I like thighs. Sometimes I even use them to keep my ears warm.
