What I know of celiac is that she can pretty much eat low carb…think veggies and protien. So, Italian is not good but a steak house would work or a seafood restaurant or a place that specializes in salads. Some health food restaurants have gluten free items on their menu. Or, Sushi!
And, I’m in the ask her out, not for her number camp. Ask her a question about something she said in class or otherwise engage her in conversation as class is ending. Then ask her if she’d like to grab a drink/coffee/lunch etc.
Have fun!
Have casual conversations about stuff for a week or two. Gauge her reaction to you. Friendly? Flirty? Disinterested? If you get positive feedback, ask her out. Suggest coffee or lunch and negotiate what location works with her dietary needs.
Or at least that’s how I’d prefer it be done if I was the girl. Of course, my problem is I hate talking on the phone. But even if I didn’t, I’d say that if your asking for her phone number is a precursor to asking her out, it’s adding an unnecessary step and delaying the whole thing to get her number. After all, you don’t need to call her to get to know her better or ask her out. You can do that in person.
McDonalds has almost NOTHING that is GF. Their french fries are sprayed with wheat gluten (they used to spray them with beef broth, but the vegetarians had a fit…non-vegetarian french fries. Gluten provides a really beefy flavor but is vegetarian).
You can also get by at a Mexican restaurant if you stick with corn tortillas and shun the flour tortillas. My youngest son is also on a GF diet and he has no ill-effects from a kids plate of taco, beans and rice with corn tortilla chips.
OTOH, Italian is the worst, because usually every pasta is bleached-wheat based and the pizza is on flour dough…the only thing that he could possibly eat is salad.
Thai food (the dishes with noodles) is likely to contain gluten, but there are quite a few dishes that do not have noodles. Ask the Thai restaurant if the noodle is rice (good) or wheat (bad) and judge accordingly.
As for french fries…here a good site that helps in finding places to eat that are celiac-friendly.

I would tell her that I’m impressed by her intelligence and would really enjoy spending some time talking to her. Suggest that we go get food and coffee either now or sometime quite soon. If she sounds positive either go right then (to the food or coffee, not just running off with a big smile on your face) and if that goes even half descent ask for a phone at the end or whenever.
If things go real well bump her hand and put it in hers during some part of the conversation, but this might go better on a more official date.
