It’s not exactly new news, but I didn’t learn about it until just recently: lard doesn’t appear to be as unhealthy as once thought and it’s apparently better than vegetable oils, Crisco and butter.
Well, I was tickled pink when I heard this and squealed with delight (internally; I was, after all, in public at the time). So, out to the dumpster went the salads, veggies and oatmeal and now it’s fry, fry, fry, all the time baby!
Just kidding. But, I did substitute using vegetable oils and butter with lard 100%. One of the biggest benefits for me is the higher smoke point of lard (375f) allowing higher cooking temperature, resulting in crisper food. Finally, my fried eggplant came out of the pan crispy and tasty, not soggy and oily. When I saw that restaurant-quality eggplant on my plate, I really did squeal with delight (why not, if I’m using a pig’s fat, I might as well use his squeal, too).
My French Fries come out great cooked in lard. But, I really want to find some affordable beef tallow to fry them to taste like the old McD fries of yore.
The Tibby Diet (I can send you the book for $29.99 plus S&H): I eat either really bad, or really good. It’s a conscious decision. Life’s too short not to enjoy fried foods on a regular basis. But, my healthy/bad ratio is a fairly commendable ~3/1: one tasty breakfast of eggs & bacon (just 1 egg and 1 strip…and then another strip when nobody is looking) followed by two days of bland oatmeal breakfast; one scrumptious dinner of fried chicken/eggplant/oysters/catfish/etc., followed by 2 dinners of some kind of healthy crap. Lunches are typically semi-bad and tasty, but small portioned. After dinner, solely to roto-rooter my arteries of plaque, I [del]chug[/del] sip two [del]jugs[/del] glasses of [del]Mad Dog 20/20[/del] fine Merlot.
It’s a diet I can live with, and guess what? It didn’t turn me into a lard-ass!***

***…I’m not saying I don’t have a large-ish ass, just that my diet didn’t give it to me…I blame genetics and a malfunctioning metabolism.
