Ketchup recipes

Does anyone have a recipe for Ketchup that does not make enough to feed an army? The minimum size of the recipes on cooks.com is 12 pints. That’s quite a bit. They also call for “ketchup spices”, and I have no clue which spices in what proportion would constitute “ketchup spices”.

Also, since the sugar in ketchup is used primarily as a sweetener and to cut down on the acidity from the tomatoes and vinegar, I think it would be possible to substitute Splenda for the sugar. I would like to hear the opinions from the more knowledgeable dopers though before I inflict a monstrosity on my family.

I’ve made decent ketchup replicas using tomato paste, cider vinegar, soy sauce, and splenda syrup (the raspberry flavor works well). Unfortunately I don’t have a recipe. I just sorta mix it together until it comes out being vaguely ketchup-y.

If you’re feeding kids or other people who expect it to taste like Heintz, it doesn’t. However, it does make an interesting variation on the theme. Adults who are into trying thing probably will like it.

It sounds good, but unfortunately, soy sauce is out, too. Mrs. Magill had been instructed by her Doctor to drop 10 pounds, and she is trying the South Beach diet, which worked well in the past.[1] This means ketchup and soy sauce is out (too much sugar), while she is not a ketchup fan, she like cocktail sauce on her shrimp, which is made with… ketchup.
[1] When we moved last spring, we both fell out of our healthy eating and exercise habits. She’s now walking 3 miles a day with our neighbors, and we have been eating healthier, but more is needed.

You sure about the soy sauce? According to this page, soy sauce is indeed allowed for even phase 1 of the south beach diet.

For what it’s worth, I came up with that recipe when I was doing south beach.

For something like a shrimp cocktail, I’d do:

~ 2-3 Tablespoons tomato paste
~ 1/2 teaspoon soy sauce
~ 1 teaspoon raspberry splenda syrup
~ 1 teaspoon lemon juice
1 small garlic clove, minced (or use garlic powder)
ground horseradish to taste

Could add some hot sauce (tabasco, etc.) if you wanted as well. The only thing there that I’m not sure of for south beach is the fresh garlic - it doesn’t specifically say if it’s on the list or not. But honestly, how bad can a teeny tiny bit of garlic be?

That’s what I was told. I could have misremembered, though.

That sounds yummy. I shall have to swing by the store, and get some horseradish and Splenda syrup. Fresh garlic is not a problem. As one of my mother’s friends said, I had the good taste to marry an Italian.

Make sure to check out the horseradish - I’ve see “prepared horseradish” come with all sorts of crap in it.
