Leftover bruschetta

Bought a container of bruschetta Sunday along with a demi-baguette. That was my dinner and while it was good, I still have leftover bruschetta and don’t want to have it with bread.

What else can I do with it? My only idea is to use it on pasta.

Frittata? Spread bruschetta in baking dish, pour scrambled eggs over it, bake. When it’s nearly done add some cheese on top.

Do you mean something by bruschetta other than “rounds of toasted, seasoned bread”?

Confused me for a moment, also, as bruschetta (or crostini) is as you described, usually served with some sort of mix of vegetables or other items on top. I think the OP is referring to the latter.

Pretty sure the OP refers to a combination of chopped tomatoes and basil, which is often sold by deli’s as “Bruschetta”. If not, please ignore my previous! LOL!

It can be a pretty good pasta sauce.

“Leftover”?

Add some chopped onions and chilis and make salsa.
