Low carb diet for 4 weeks - Anyone care to join me? [Continung discussion]

Today was one of those “screwit, I’m going for it” days. Me being SUCH a rebel, rather than pounding down donuts or chips or cake or chocolate, my big transgression was two slices of Dave’s Killer Bread to make a sammich of my lamburger with asiago cooked on the grill. My other cheaty thing is corn tortillas made into cheese tacos with plenty of salsa and lettuce. Three of those and I’m too full to function. Sign me up for the Wild Bunch, woohoo!

Yesterday’s breakfast was 1.5 jumbo eggs, scrambled, and two rashers bacon.

I didn’t want another ham or tuna sandwich for dinner, so I had to come up with something. There were three boneless, skinless chicken thighs in the freezer, and a bag of Trader Joe’s broccoli florets in the fridge. I baked the chicken thighs with some salt and pepper. In the meantime, I mixed half a cup each of light mayonnaise, sour cream, and grated parmesan cheese, a block of softened cream cheese, half a teaspoon each of kosher salt and dehydrated onion, and a bit of black pepper. I folded the broccoli into the mixture. When the chicken was cooked I shredded it with a fork and folded it into the mixture. The mixture then went into the baking dish (with the grease drained from the dish of course). I covered it with shredded Tillamook medium cheddar and put it into a 350ºF oven for about an hour, until the cheddar was browned.

The result was a little bit salty, but no worse than what you get at a lot of restaurants. We both liked it. And there are plenty of leftovers.

Weigh-in day.

Two things happened this week. I broke my 20-carb maximum for the first time when I went out with friends to a Mexican restaurant.

And I gained for the first time in 6 weekly weigh-ins.

It was just 0.8 lbs., but I’m not thrilled about it.

Total loss: 23.8 lbs.

Back in the saddle today. Good things await.

I’m not a vegetarian, but I seem to be playing one at my work desk today. For a snack I bought some organic green beans and some Jalapeño Toby’s Tofu Paté from the overpriced pseudo hippie store next to the library. I dipped the beans in the tofu and munched away. The carbs in this dip is barely worth counting - 2grams for 2tbls. I love raw green beans.

Salmon in white cream sauce. My kids get it over pasta, and I get the sauce leftovers. Pretty tasty.

I credit Johnny LA and the 3 gram tortillas + avocado as keeping me on the straight and narrow. Can add an egg, cheese, protein of choice, siracha, and call it an almost satisfying meal.

That sounds pretty damn tasty. I love avocados, but I’ve been avoiding them (1 avocado has 17 gm carbs and 320 calories).

I’m back to doing Weight Watchers and losing slowly. Down 7 pounds. During last night’s meeting someone talked about the Hamilton Beach Indoor Grill (electric). I’m going to investigate because I don’t do outdoor grilling, but an indoor grill would help with veggies.

After a second week of not eating great, I still dropped about three pounds. I’m dialing back on fat without increasing carbs, though, and as a result my sodium is creeping up. I’m adding on ounce of flax seeds to everything and sticking to lower fat cheeses. And I am determined to excercise more regularly.

This is me today.

I mean I haven’t done it, but I really REALLY want to.

Dinner tonight: Cube steak, cut into strips and then cut across the middle, seasoned with salt, pepper, garlic powder, onion powder, and a good amount of chile powder and fried in a pan, served up on two low-carb tortillas with sour cream and shredded cheddar cheese.

So I was down at Fred Meyer today, and I had to walk past the clothing. They had swimming trunks for 60% off. I picked out two and held them to my waist. They seem right. And I picked up a pair of shorts that I thought I’d better try on. As long as I was in the fitting room, I tried on the trunks. Too big! :eek: They were XL. I went back to the rack, and all they had in one design was S, XL, and XXL. (The other design was the only one, and it was XL.) I can’t believe I needed a Large and not an XL. No trunks for me.

My 40" 501s are falling down. I should have a pair of 38s mañana. The Carhartt shorts I bought today are 40 x 10, and they fit just right. For now. Still looking at losing another 15 pounds.

I went to the NP for a checkup and used their scale. 204.75 pounds. I weighed my clothes before I went, and my naked weight was 203.5 pounds. So I’m down 48 pounds! Fifteen more to go.

Saturday I think I’ll make shrimp fajitas.

Off topic, but do you mean your clothes only weighed 1.25 lbs? My nightclothes weigh more than that, and I’m no bigger than you.

Yes. I wore Ex Officio shorts with a built-in liner, like a swimming suit. (They’re actually pants, but I had the legs zipped off.) And I wore my lightest aloha shirt. I took my sandals off and removed my wallet before weighing. I used my kitchen scales to weigh my clothes.

Ah, nylon. I mostly wear cotton. Those good for hot weather?

This morning I just touched 50 pounds down. I’ve been out of the office (telecommuting, sick day for Creamsicle, a week of vacation) and one of my coworkers almost didn’t recognize me.

I got a new pair of 501s last week, with a 38" waist. They’re kind of loose. Ten more pounds to go. (Or maybe 15 or 20. We’ll see how it goes.)

Feeling meh today. Last major milestone (new pants size, new round number weight) was four weeks ago and while all appears to be on track, nothing to write home about. Just on the long boring stretch of waiting for another notable milestone.
