Why can’t the shell of an M&M can’t melt in your hands but in your mouth?

It dissolves in your mouth. It won’t dissolve in your hands unless your hands are significantly wet. Milk chocolate without the shell, of course, melts in your hands.

It’s saliva. Saliva is an excellent enzyme (biological catalyst) which is designed to make foods edible to human beings break down easily.
Hands don’t have saliva. Mouths do.

I tend to dump a handful of M&Ms into my palm, and then pick at them one at a time. It’s easier than picking them out of the packet. Anyways, I usually find that by the time I’m reaching the bottom of the pile, the shells have become sticky, like they’ve begun to dissolve. Could that be because of the warmth of my palm?
