Probably Sario thought it was a done deal that he was getting lynched, but in case they were wrong about the mason, it makes sense from him to vote Sangfroid. There he has two chances of either Plum or I being the mason. If he had switched to Plum or PMollusc, there would be at most one chance of voting with the mason.
