Modified Egg Mcmuffin - Healthy?

Second this idea! I use foil muffin cups (less mess and more portable) and fill then with seasoned chopped veggies- I use the frozen stir fry vegetable mix for a variety of veggies- (optional bit of grated cheese) then add the eggs. Very easy to reheat in microwave.

David Zinczenko of the Eat This, Not That series – someone who constantly rants against the unhealthiness of restaurant food – has said that the plain Egg McMuffin is one of the healthiest restaurant breakfasts.

Special K has some frozen breakfast sandwiches. While not as good as an Egg McMuffin (they use scrambled eggs instead of fried ones), they are very quick (1 1/2 minutes in the microwave) and tasty enough.

It doesn’t take that long to make your own, though. Maybe about 8 minutes. You also can use better cheese than what McDonald’s uses.
