My fave homemade breakfast sandwich! Share yours!

Split bagel toasted, cream cheese on both halves, ahi poke on top, served open.
I take full credit for inventing this.

Core and peel an apple. Slice into rings. Toast english muffins and spread with peanut butter. Top with apple rings and, if you like, sprinkle with a little cinnamon.

How about some more ideas that don’t include eggs.

Another eggless one: Peanut butter (the real kind with just peanuts and salt), sliced banana, and marmalade. Best with Seville orange (aka Scotch-style) marmalade, although sweet will work. I usually use whole-wheat or multigrain bread, sometimes toasted, though English muffins will work. (Those must be toasted.)

Egg, cheese & bacon quesadilla.

1 well beaten egg
1 or two corn tortillas. (Also good with small flour tortillas)
Grated white cheddar
Pre-cooked, diced bacon
Black & red pepper to taste
Olive oil

  1. In an 8 or 9 inch nonstick pain, heat a half tablespoon of olive oil & bacon until sizzling
  2. Add egg, beaten with pepper
  3. When egg is half set, add grated cheese and top with tortilla
  4. Shake pan to keep egg from sticking (spatula & oil help with this)
  5. When egg is mostly set, use a thin spatula to flip tortilla & egg
  6. Add more cheese
  7. Either fold tortilla or add another
  8. Flip again to crisp both tortillas (or sides)

Serve with salsa & sour cream

I skip the egg and add diced tomato, salsa verde, and either thinly sliced ham or more bacon. For folks who prefer sausage, I crumble fried patty sausage into the filling. (If they want eggs, they’re probably better off making their own, because I have no practice at all in cooking eggs.)
