My husband brought home 4 dozen eggs. Now what?

My son has saved all of you from a long, long thread of me posting pictures of things I make with eggs in it by buying the fixins for a dozen eggs eggnog for him to share here and at the firehouse.

I mean, it’s still gonna be a thread of me posting things I cook with eggs in it, it’ll just be a shorter thread.

Banana Nut Bread-- 2 eggs. 7 eggs total.

Yum! Sliced warm and slathered with butter, yes?

Nope. An after dinner treat.

Oh, oh, then slices topped with whipped cream? Ice cream?

Although banana bread is perfectly fine all by itself, too.

It’s the only way to use up over-ripe mushy bananas. The bread is tastier with blacker bananas.

If they’re not mushy black it’s not worth the effort.

Starbucks occasionally has a nice banana walnut bread.

The 'naners were one day away from the garbage. My husband said on Friday he was gonna make some to take to work. He did NOT think it all the way through because he had 3 bananas and thought he would make three loaves. And then he turned himself into a loaf and spent the holiday doing his Al Bundy impersonation all the way down to his hand in his sweatpants.

We all had a great Christmas.

Banananana bread. I made two loaves for Christmas family dinner. Easiest recipe ever. I don’t hardly measure any more. One egg, nah, add another. Enough butter, nah, add some more. Sugar, honey, why not both. Flour, just add until you get the right consistency. Vanilla? That looks good. Raisens, sure, or not. Macadamia nuts, sure thing.

I hid one of the loaves! Mine/ours, wife and I will enjoy it watching movies.

My MIL is about to turn 92 in a few days and doesn’t cook much anymore, but she used to make banana bread in a 9"x13" pan and send half of it home with us when we would travel up to see her (to make sure we didn’t starve to death on the way home, I guess). Very nice for breakfast with a big ol’ cup of coffee.

The American Egg Board wants everyone to buy lots of eggs, so they have a bunch of egged-up recipes.

I haven’t tried any of them, but the Easy Vegetable Egg Casserole looks good, uses a dozen eggs, and you can serve it for dinner:

At that point we peel them and put them in ziplock bags that go into the freezer. My gf uses them in her afternoon smoothies. We never throw out bananas.

interesting: I assume you peel them for a reason … do they freeze better this way?

Japanese cheese cake recipes use tons of eggs. Here’s one pulled more or less at random and it calls for 8 egg yolks!

They’re easier to use that way. When she makes a smoothie she just dumps in one or two pieces (I cut them in half so the fit in the small ziplock) into the blender, adds some pasteurized egg white, chia seeds, oat milk or juice, the blend.

yep, makes all the sense in the world (not having to peel a frozen 'nana)… and also chills the smoothy …

I got distracted and thought you were talking about making a smoothie with a hard-boiled egg. I couldn’t see the attraction.

Biggirl Quiche. Surely I’m not the first person to throw all the stuff I threw in there but I feel confident I am the first person to name it “Biggirl Quiche”.

On the down(?) side, I put so much stuff in there that I had to cut back on the eggs. 3 eggs-- 10 total. Good thing they last forever because I haven’t even broken a dozen yet.

Anybody ever try to make an Oysters Rockefeller quiche? I did once a long time ago, and it was pretty good.

That looks awesome! And yes, quiche is one of those foods where you can take a look in the fridge, see what needs to be used up and just throw it in there.
