Since MrTao’s family regularly introduces me to their cooking, it’s probably my turn to introduce them to mine. I do think I make quite good posole and albondigas, but living with MrTao has taught me that individual tastes vary so much that it might be great, but it’s still not 'mom’s, or however someone likes it, lol!

So I got a wild hair up my butt tonight and got ingredients for spanakopita. I don’t have a recipe, because I made 12 batches of it nearly every night for about 2 years for work, 25 year ago, and I don’t need no stinking recipe! (Also the same place I made a minimum of 15 gallons of soup a night; this may have something to do with the fact that I can’t make soup or food for less than 10 people, lol)

So, since spanakopita is about as far from mexican cooking as you can get, I kinda doubt they’ve had it, or had it often, anyway. MrTao has already asked what I’m making, I gave him the name, but not the ingredients, 'cause he’s gonna hear ‘spinach’ and start barfing. I am also not a spinach fan, but in this form, I can eat it every day. And probably should. I will make it with queso fresca instead of feta, as feta has either gotten super expensive, or…maybe I should have done a run to Costco for that, hrm. Anyway, the fresca should work, as it crumbles and doesn’t really melt, much like feta. We shall see how it turns out. I may make a couple batches and totally mess with the seasonings in one of them, add cumin and maybe peppers, mmm.

Now I’m hungry.

Also, (TMI Inc!)… Anyone else’s sweetie get their spouse’s PMS? Or does your spouse get yours? About a week ago I had several days of serious PMS. Bloating, eating EVERYTHING, BAGS of halloween candy when I don’t normally have a sweet tooth, etc. I don’t get that often, couple times a year. It went away, my period started today…and now MrTao has my PMS. He gets it OFTEN, even during times I am not expecting my period. Once he asked me if my period was coming up 'cause he felt like he had ‘your PMS’, but it wasn’t anywhere close to time for me, and I said no. And I started that night. :open_mouth: Poor guy.

Also… Sheep! This made me laugh and smile; had to share :slight_smile:

My DH doesn’t share symptoms with me, but he has an uncanny talent for ramping up the smart-assery and boneheadedness when I’m getting hormonal.

Shame it’s a fake. I’ve seen high end shepherding competitions, and bits of that are way too precise- the sheep appear to be doing the legs of the ‘giant sheep’ of their own accord- there’s no shepherds or dogs there, also during that bit the clouds suddenly stop moving. The light levels are constant during the ‘pong’ bit, even though they’re changing noticeably during the shot of the guys at the end, and it should be taking at ages at dusk so it should be much darker by the finish and…
Aaaanyway.

Tao, are you sure you don’t have a spanakopita recipe in a snaffleable form? I love the stuff, but it’s always really expensive here- and I’m trying to grow my own spinach, and it’d be great to have some nice recipes to try. No pressure or anythin’ :smiley: flutters eyelashes

Bacon and a pee-can waffle were indeed in my foreseeable future. Of course now they are in my past and tummy is happy.

ETA: Actually, baccon and pee-can waffle are in my present. However, at some point today I am sure they will be in my past.

Hrm…here’s my recollection, more a matter of ratio than exact measurements, which is good as I made huge batches at once, hehe.

[spoiler]-Frozen spinach; alas, I don’t know at this point how to make fresh spinach work, though perhaps cooking it way down to total wiltedness would do.

-Eggs

-Onions

-Crumbly cheese, usually feta, but I think anything that won’t melt easily or much would work fine

-Frozen phyllo dough; if you have the balls to make it yourself, go for broke, but I do NOT, hehe.

-Butter, melted. Lots. (Crap, I forgot to get butter! I am not sure how it will work with margarine, hrm)
-Thaw frozen spinach under cold water, and spend half an hour wringing it out. squeeze all the water out of it until it’s as dry as you can get it. I suggest wearing rubber gloves, as this may make your hands kinda itchy.

-Sautee chopped onions. Our original recipe called for nearly no spices, but I’m a spicy gal, always added oregano, basil, white pepper <I need more white pepper!>, garlic, a little salt, and whatever floats your boat. With just those, especially the white pepper, some lemon juice, and it’s great. You can sautee the onions in all that, or sautee fresh garlic with the onions and add the rest to…

-Beaten eggs. I mean, whip them until they are airy as airy can be! Do this with or without the spices; I tend to add them here, even if I do add a little more to the onions, hehe.

-Take sauteed onions, including whatever oil/butter you sauteed them in, add them to the eggs, and add the spinach. Mix it all up.

-Add the feta/cheese; mix it all up again. Mix as much as you want. Don’t bother tasting it, you won’t get a good idea of what it will be like. Let me just say here that you really can’t overdo it on the spices.

-Do the phyllo layering thing in a baking pan, for about 10-12 layers, or whatever ends up looking good and thick enough. (This part is hard to describe, but I am guessing youtube probably has great videos for this)

-Put your spinach mess all in there, pack the corners good, get it as even as you can.

-Do more phyllo layering stuff, fold over the edges, coat top with more butter until everything’s flat and sealed up.

-Cook at 350-375, covered with foil, for about, oh…40 minutes. Depends on the dish size and thickness, really. Uncover, and cook another 10 minutes until it’s golden but not too brown.

-Take out, let cool, cut into squares

-You now have an extremely nuke-able, rather healthy lunch-snack-whatever, that will keep for many days. Not sure how freezing affects the phyllo, though. [/spoiler]

And I can always freeze the spinach first! Might have to actually, the bleedin’ slugs had et most of it again, so I don’t have as many plants as I thought…

Well, I think the reason frozen spinach works is that it’s just really wilted. The texture is just awful normally, but after it’s all cooked together it does change a bit. Definitely tastes good! So I think just chopping and…shudder…boiling it would work great, probably taste even better!

For what it’s worth…12 of those small, square-ish packages of frozen spinach used 6 eggs. I do know the egg bit is not just a small amount; I think it helps quite a bit with the binding. When I make it this weekend, or whenever, I’ll try to get measurements and see if that helps.
Also…I have become a HUGE fan of Cavender’s Greek Seasoning over the last few years, and I think it will make this even more spectacular. So I plan to add tons; I don’t think you can go wrong with it there. :slight_smile:

Someone’s shiny new motorcycle isn’t so shiny now. At least I think it was new. Some young goober wearing a cowboy hat instead of a helmet drove a black Ninja down the street and makes a broad turn in the cul-de-sac. The UPS guy makes this u-turn daily with no problems. Goober? Nope. He took the turn too slow and dropped the bike right in front of my mailbox. He just went <plop!> without skidding. After he picks himself up, it took five minutes before he was able to re-start it and go more than six inches before stalling it.

The moral to the story? There should be an inverse relation to the shininess of your motorcycle license and your motorcycle.

Man oh man, am I ever a walking ball of confusion at the moment. I’ve been getting ready for a trip to Sandy Yeggo, and there was a test review today. The contractor failed it, so the testing to start Monday was cancelled, and a new test review scheduled for Tuesday.

I always like business travel, because I view it as an adventure. Plus, Sandy Yeggo is a place I like, and I have family there. Strikes against.

On the other hand, 3 weeks gone is a major imposition at home, and I was facing a domestic chores death march to make things easier for my one armed semi invalid wife while I was gone. I also suddenly went from a day and a half weekend to four days off. Strikes for.

I guess the relief of the schedule slip outweighs the disappointment of not going, but not by much.

Howdy Y’all! Home from irk. Actually have been since about two-thirty. I was a bad boy and decided to start the three day weekend early. I celebrated by mowin’ da yahd. 'Tis pleasant out with a temp of only 75 Amurrkin. A cool front apparently has made it’s way to south Jawja.

HEE gotti! Encouage him to continue not wearing a helmet. He sounds like somebody who needs to get outta the gene pool.

Pizza night tonight. Matter of fact should be here shortly as I ordered it online and OYKW is pickin’ it up. Gotta make him earn his keep somehow. :smiley:
