We called those “crispy eggs” and they were my favorite childhood food. My sister used to make it for me in a thick stainless steel pan with lots of butter.

- This dish that I invented that has kale, diced sweet potatoes, fresh garlic and lots of habanero peppers sauteed in olive oil with Louisiana spices. It is too hot for most people to eat and pushes my limits sometimes as well but it hits many flavor notes in an intense way. I make a batch for dinner very often and then have it for breakfast as well.
