My son has digestive issues and needs to really bump up his fiber intake in addition to the medicine he’s taking. The doctor told us Fiber One bars are fine, but of course I’d rather make something similar but perhaps cheaper.
Any good recipes? Would any good chewy granola bar do?
You might try the Hungry Girl Grab & Go Breakfast Cookies with 5 grams of fiber
http://www.hungry-girl.com/newsletters/raw/1076 - scroll down about halfway for the recipe.
Aldi has one called Fiber Now (clever, eh?) with 130 calories and 10g fiber. Box of 5 individually wrapped bars was $1.49 today, and they come in several flavors (I’m partial to the chocolate drizzled ones, of course.)
It’s possible you can make them cheaper, but I’m not sure you can make them cheaper *and *more convenient *and *as tasty.
You might want to try Homemade No-Bake Clif Bars and adapt it to be more fiber-heavy.
Good ideas…I’ll check Aldi too, because while I like to make granola bars, I don’t like to HAVE to make granola bars!
I used to have a good chewy granola bar recipe, but I don’t think it was as fiber-heavy as the Fiber One type. Of course, we could eat a whole batch in about a day, so fiber wasn’t really the problem–keeping them in stock was.
I don’t know your son’s tastes, but I used to eat one of those FiberOne bars (well, the store brand) religiously as a snack at work. From experience, they can get a bit tiresome; the store brand only has three varieties, although Kellogg’s FiberPlus has more (but are also more expensive).
One discovery I recently made is that Mission makes a line of tortillas called “Carb Balance” that are high in fiber—the small variety alone has 10 grams per tortilla. What I do is smear some homemade hummus on the tortilla, stuff some kale in it, wrap it up, and take it to work with me as a snack. It’s quite good, and probably healthier than those FiberOne bars. One could also make some soft tacos, fajitas, burritos, and so forth with them, were one so inclined.
Missed the edit window, but I discovered that the nutrition facts are on Mission’s website. Sadly, whoever designed said website was, as far as I can tell, some type of baboon or possibly a macaque; there is no way to link directly to one of their products. So! Go here and scroll the frame with the pictures of tortilla packages down about a third of the way. The full product title is “Carb Balance Small/Fajita Whole Wheat Tortillas”. Click on that, and you get the nutrition facts. They’re chewier than the average tortilla, but I rather like that, actually.
