Here’s the original. I’ve gotten lazy with the spices and use mainly Penzey’s Chili 9000 and some others. It’s really up to you how involved you want to get and what your personal tastes are. Oh, and there isn’t any hard rule on the amounts because that’s also a matter of taste. Also, it looks like I may have omitted a jug of chicken stock:

3 boneless, skinless chicken breasts
1 large onion, chopped
1 green pepper, chopped
2 cloves of garlic, minced
2 jalapeño peppers, minced (optional)
Ancho chili powder
Cumin powder
Chipotle chili powder
Cinnamon
Mexican oregano, dried
Smoked Spanish paprika
Chocolate (60% cacao, minimum) - optional
Olive oil
3 cans black beans
1 can diced tomatoes
Salt, to taste

Cut the chicken into 1 inch pieces (easiest to do when partially frozen). Spread out on cutting board. Liberally sprinkle the ancho chili (at least three tablespoons) over chicken. Repeat with the cumin (at least two tablespoons), then lightly with the chipotle pepper (probably about two teaspoons or less; it’s hot). Add a liberal amount (several tablespoons) of Mexican (NOT Greek or Italian) oregano and a small pinch of cinnamon. Add a teaspoon or so of paprika. Toss the chicken until well coated with spices. Heat about ¼ cup (maybe less) of olive oil in a deep skillet over medium-high heat. Add the chicken and scrape in any leftover spices. Brown the spices well, turning the chicken frequently. This method releases the chili oils in the spices, making for a deeper flavor.

When the chicken is cooked and the spices browned, add the onions, peppers and garlic. Continue to sauté over medium heat. Open the tomatoes and drain the juice into a bowl. Chop the tomatoes until they’re at a size you like. When the onions and peppers are cooked, add the tomatoes and juice and the black beans. Bring to a boil and reduce heat to simmer. Add a couple of squares of the chocolate. Let simmer for about an hour or more.

A week ago Wednesday we made the deal at the furniture store for a new TV. They were out of stock but expected a shipment the following Monday. The deal was really good. There was a significant discount, it would be mounted to the wall and set up for free, I got a fifty percent discount on the warranty and they will haul away the old TV.

It was to be delivered and mounted today between 0800 and 1200. We moved the present TV into the middle of the room and cleared out the whole end of the room where the new TV was to be mounted and sat down to wait.

At 1230 the crew was a no show. I called the support number for the independent contractor that was to do the job and mt work had been rescheduled for 01.05.2026. I called the salesman at the store. He said that I should have been notified and that he was sorry.

My response would be imprudent to post here…

We have leftover prime rib, but we didn’t have it for dinner. Instead, I made tuna-and-egg salad. Mrs. L.A. had hers on toast with American cheese, and I had mine on un-toasted Delightful Multi-Grain with margarine, provolone, and jalapeños. Now I’m out of jalapeños.

You have reminded me about Victoria. I saw the first series, then lost track of it. They do play a bit loose with some facts and timings, but it is good. I always forget how good Rufus Sewell is. Dash, of course is delightful.

8 hours of committed slothful behavior have taken care of the afternoon and evening hours, a good night’s sleep and I should be ready for whatever tomorrow brings. All the laundry is put away where it lives and the house is moderately tidy, so I have that much on the accomplishment list. Got my held mail delivered today, 95% of it was people wanting money and a Medicare statement, so that has been dealt with. Actually watched a movie on TV (The Incredibles 2, it was between OK and Good IMHO), 64F now and staying above 60F tonight and reaching 73F tomorrow, but then the cold weather comes back.

FCM, congrats on the pellet relocation, guess I need to do more on the weight machines at the gym for 2026. Hope you can find some quality trashy novels, if that isn’t too much of a conundrum…hope Toby likes the books.

JtC, I’ve always had long-lasting coughs, but they are few and far between and mostly go along with the spitting. Doing much better. Glad Hubs saw sense and that VA place sounds like a good one. Hope the medications work.

One of our clients is Radeas which does blood and urine testing, among other things. But despite sending sample Next Day Air, they don’t transmit the address data, so I have to type: “27587 907”< tab >< tab >“gateway c”< tab > < enter > a hundred times a day.(and when they use the bags I can feel the difference between urine and blood sample vials)

We also had tuna for dinner. I like it like my grandma made it, with lemon juice, mayo, and a little sugar, but I’ve stretched to include TJ’s sweet and hot jalapenos and pickles.

I checked my irk email. For those keeping track, my position is being eliminated. I got an email from our Tampa data team (who are taking over the data part of my position) saying they’re having trouble with Company A (and thanks for sending the clean file). Company A has parts of business names in the address fields, often with parts of addresses, maybe the business address in the secondary address field. Or maybe the addresses are just crap altogether. And maybe the bits of the business names mixed up in the address fields are DBAs. Or legal names. Oh, and Canadian postal codes are truncated to five characters, and need to be completed. Of course I have my processes (which they don’t, and won’t) that makes short work of it. :joy: :laughing: :joy: :laughing:

If there is a program in the area with services for victims of domestic abuse they might make good use of it, whether as materials to use in therapeutic art therapy or to make items to sell for fundraising or to auction the kit and caboodle off at a fundraiser.

I have a gnawin’ and a cravin’ for fried shrimpies.

I’m up and looking for ways to get into trouble. It appears I’ve found one. Did I mention taking my hearing aids back? I think I did. Well, I was just looking at our financial tracking and it appears that they charged us the full amount instead of crediting the full amount. I can’t tell for sure until MusicMan is up, though, because it’s on his credit card and they want to send him a secret code to authorize letting me in. Grrr.

Speaking of grrr, I have a sore throat this morning. It seems as though MusicMan is sharing with me. Ok, I’ll try to be less grouchy next time I come back around.

The “drunk” and “disorganized” parts of my life are familiar, alongside, “unprepared” are all in my C.V.

This is why I never became a successful writer… (OK, not that I ever really tried or anything.) When we had to do stories or essays or whatever in school, I felt like it had to be right the first time or it was a failure. So once it was written, it was as it should be. Changing it meant I’d done it wrong.

Yeah, I know, but that’s how my brain worked and continues to work. The closest I come to editing is looking for typos or grammatical goofs, which, naturally, are rare. < snerk > Oddly enough, I don’t have that problem with engineering designs. When I review my work, I’m looking for ways to make it better and to eliminate potential problems that might crop up during manufacture, assembly, installation, or use. I see the contradiction. And you’ve now had a peek into the workings of my brain.

There’s a new seafood place that we pass frequently, and every time we say that we need to stop and try it. But I’ve checked out their menu on line and it’s largely fried stuff. We’re trying to avoid breaded and deep-fried food, so that’s why we haven’t gone there yet. No battered, deep-fried yumminess for us. Dammit.

I have about 2 more hours of peace before the grandspawn become mine non-stop till Tues afternoon. They’re old enough to be in the basement alone but they always want me to be with them. We’ll have to work out something. SIL is bringing a video game box and he’ll be hooking it up to the basement TV, they’re bringing some toys, and they’ve got some here. My main concern is food. I brain farted when I went to Food Lion the other day - I’m almost out of bread and fruit and I forgot to get juice. I may have to load them into the car and make a grocery run. So there’s that.

Too bad I don’t drink… :grin: Well, hardly ever. There’s room in the cabinet for some amaretto… :thinking:
