My aunt and uncle live on the hills of central Vermont and up until a couple of years ago, sugared and produced their own syrup for their little country store for 20+ years…they’re in their 80’s now, so if anyone’s in the market for a used sugar shack, let me know…

Seriously, they produced and sold mostly what is now called ‘Grade A Dark Amber’ as they collected in the early and mid part of the season before they started cooking…it was also their favorite and the most popular…my aunt always laughed that, when some snobby flatlander came in and scoffed they were looking for the ‘light-colored syrup’, she’d say, “We only sell the kind with flavor in it…”

They gave us a couple of half-gallons of their last batch and we use it sparingly…although it’s sad when it goes, I love the crystalized maple sugar in the bottom of the container - takes me back to my childhood…

As I understand it, there is still a difference. Grade “A” Amber is early to mid-season collection syrup that has been boiled until it darkens. The change is that they’ve started boiling it to different levels and have given the colors standardized names. Grade “B” is collected in the late season as the trees are waking up, and is much richer in nutrients and flavor. It’s a more molassas-y flavor. It starts out darker, but is also boiled longer to kill a “grassy” taste.

In the case that no real true maple syrup is available, treacle may be used. Treacle is what happens when you boil the devil out of corn syrup until it is seconds away from spontaneous combustion. And of course, a good sulphured black strap molasses is always acceptable.

I was strolling through Costco today and what befell my eyes but a giant stack of Bear Pancake batter. I instantly recalled this thread. Now when I think of manly usernames “Happy” doesn’t spring to the forefront of my mind, I thought I’d give these things a try.

Consider me sold! I had them for dinner tonight. Yum. Thanks for turning me on to this protein packed mannish goodness.

I note that the box indicates that it is also a waffle mix. My usual conversion of flapjack batter to waffle batter will generally involve adding an egg and oil. What’s the recipe when using this product?

Water + mix. Oil is listed as optional.

Just a warning that these things stick like a mofo to my seasoned “non-stick” waffle iron. You need to make sure you brush it with oil/shortening/whatever each time, or be prepared to do a lot of cursing.

I discovered these were at the local food repository - purchased a box (only thing that would fit in the cart) took both of us to load it into the back of the truck and we drove home slowly so as not to break said truck.

We cook ours over a hot fire in a properly seasone cast iron IRON skillet.

These are some damn fine cakes - I appreciate the headsup.

I have now purchased a box for my teenaged son who is becoming more manly by the day (4 inches taller in 4 months :eek:). These sound like just the food for a manly-young-manly man in training.

You can also add milk and an egg, to up the protein.

I used to have an aebelskiver pan. I wonder what happened to it? They were delicious, when I made them.

Though tomorrow morning, I am making pannukakku, sort of like a dutch baby for those more familiar with that name, with fresh berries. Dutch baby is NOT a manly name, of course. Pannukakku, each “k” individually pronounced, or ropsu, “r” vigorously rolled, sounds much manlier.

PS. Real maple syrup is the only kind worth having. Treacle is NOT acceptable. New York State maple is superb. My father claimed that Vermont producers bought New York syrup to stretch out their supplies and sold it as Vermont. I have no cite or evidence whatsoever for this claim, but merely say that NY produces fine maple syrup.

I hope the OP is getting a cut of new sales from Kodiak Cakes. Thanks to this thread I bought a box on my last shopping trip. We had had regular Bisquick waffles the day before, so I made the muffin recipe on the box, with chocolate chips. They were very well received. I look forward to making pancakes and/or waffles sometime soon.

ETA: Only wrassle said bobcat AFTER you’ve consumed the Kodiak Cakes. Bisquick wouldn’t help you in a fight with a medium sized ram, let alone a bobcat named Happy.

Just got back from Denny’s where I enjoyed a plate of salted caramel & banana creme pancakes. They were heavenly.

However, I fear that is the polar opposite of manly. :o
