This was my first choice.
He’s a friend of a friend and I can confirm this.

Here’s somebody you probably have never heard of (Eric Mongrain) doing something with a guitar that is impressive to me:
Not only does an entire stadium of people think this is an impressive performance, but Annie Lennox counts it as one of her favorites.

There’s a young Indonesian guitarist who does some excellent covers of heavy metal songs. Her name is Meliani Siti Sumartini. She lives in Bandung, West Java and goes by the handle MelSickScreamoAnnie.
Here she is playing a Metallica cover:
A number of years ago someone here posted this video of a college student (Julia Nunes) doing a rendition of Build Me Up, Buttercup on the ukulele. I’ve probably watched it a hundred times since then. There’s something so magical but sincere about it. I love her facial expressions. It brings a smile to my face every time I watch it.
If someone else posted this, I missed it. Sultans of Swing - Dire Straights. This is one of the best versions ever. It must have been great seeing this live. The energy is palpable. As noted in the Youtube comments, the drumming takes it to another level.

The video above makes me think of this video:
(the message board is now stopping all embedded video links it seems…despite the kludgy workaround that used to work when the problem first started)
After researching a past thread on the topic, a method posted toward the end of the thread worked - right click on the video on youtube and select “copy video URL” (rather than copying and pasting from the address bar), then paste and add a forward slash at the end of the code. It worked for me, at least.
I added the forward slash and it still told me to piss off.
