Last nights supper was Shepherd’s pie topped with baked sweet potatoes. It was cold here. Comfort food sounded good and I stuffed it full of veggies so it was healthy to!

Tonight will be chicken something…not sure what the something is yet though.

I have an interview in 30 mins, then I need to take my laptop to IT to have them wave their magic wand to help limp it through the rest of this week as work has finally decided that I am eligible for a new one which I get next week.

Did my expenses today also. I tried bribing mr ems to do them. He said no. I tried bribing everyone else I knew. They said no also. Hate the taping, date sorting, entering into the stupid system. Grrr.

If you figure out the chicken something that is for dinner, mmmmms, let me know. I had planned on making a coconut chicken thing with mango salsa, but I’m just not in the mood now. So I have chicken and don’t know what to do with it.

Well, I did it. I volunteered to be task lead for a new project at work. Dunno if anyone else did as I haven’t heard back from the boss yet, but either way, I don’t mind. I think it’s gonna be a neat task that’ll take me out of my usual analytical box. Too bad you don’t have the clearance and the need to know and access to the classified network - I could tell you all about it… <cue mysterious music> OK, in reality, you’d probably listen politely, then go “So??” but it’s what I do and I think it’ll be a neat project.

And when you come right down to it, when anyone discusses their job, you pretty much tend to listen politely, all the while wondering how anyone could do *that *for a living… Except for **Rebo **- I really envy your design work. I miss the problem solving in coming up with a good design. And you’re going to do fine with your presentation, so don’t sweat it. Just open with a joke… :wink:

Supper tonight is buffalo chickie on the rotiss. I dumped buffalo wing seasoning over the whole bird, rubbed it in, and stuck it in the rotisserie. It smells pretty good. Gotta decide on the sides now.

Daughter just called - sounds like she’s got what we’re just getting over - poor kid. She’s already taken tomorrow off. I gave **FCD **the vaporizer last night and when I woke up, I didn’t hear him coughing, so maybe it helped. If so, that’s what I’m going to tell my little girl to do. Poor baby.

Other than that, just another freekin’ day in paradise. I can has weekend?

I just suggested to a coworker that he use some newer software. First comment: “Wow, this is faster.” A couple minutes later… “It’s magical!”

I can’t remember names. I can be introduced to someone and 2 minutes later I;ve forgotten their name. Sometimes I don’t even remember their faces.

I have only vestigial social skills. I like people, mostly, but if they needed someone to go out and mine the asteroid belt for months at a time, alone, I could do that, easily.

I have no musical talent. Most everyone in my family can play 1 or 2 or 3 instruments, except me. I love music, I just can’t do it myself.

I suck at staying married. I have no further comment on that.

Dang, I wore my purple earrings today. There’s no rule saying I can’t wear them two days in a row. I’ll even pull my hair back so they’re more visible. It’s kind of appropriate for where I work since 95% of the people there are, according to Housekeeper Flossie, either gay or in recovery.

Culinary Boy is bright-eyed and bushy-tailed today. He’s much much better, thanks for all the healing thoughts. His replacement phone came today and he got a call from the police station asking for more details about the attack. They’re going to see if there’s surveillance footage and they gave him a number to call for someone to help him with his victim’s compensation! :smiley: Because last night we went to the dental urgent care and they said they can save the two loose teeth but it would require <ominous music> root canals </ominous music>.

And now he’s frying up bacon to mix into whipped potatoes. And I’m hungry again. I can’t get between The Boys and their NOT because I don’t want to lose a hand. I guess I’ll make some fries and not share them.

Welcome to the club. I can never remember names. I can remember clients because I have a design to pin the name to, but I can’t remember which person belongs to what.

Music? I can sing. I have a very small range, I have no idea what note I’m singing although I know if I’m higher or lower and if I match, and I can keep my place during rounds. I’m also really good at memorizing lyrics. My dad is amazing - he can sing tenor or bass (I think). My mom can read music and play the accordion. At least I’m better than my sister - she has NO rhythm and can’t even guess what relative note she’s singing. It’s bad.

I’m trying to decide what I want to do for dinner. I’m skipping art class tonight so I can do stuff that might involve the internet (or more likely, making it so I can walk in my room.) I could still meet my mom for Baja Fresh or I could go do all you can eat sushi by myself… I don’t want to eat at home because we don’t have anything.

Chicken Parmasan is being prepared by daughter#1, and I need to go play with the grandbabies, but here is the carrot cake recipe I was talking about yesterday.

2 cups granulated sugar
1 1/3 cups vegetable oil
3 extra-large eggs, at room temperature
1 teaspoon pure vanilla extract
2 1/2 cups plus 1 tablespoon all-purpose flour, divided
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 1/2 teaspoons kosher salt
1 cup raisins
1 cup chopped walnuts
1 pound carrots, grated
1/2 cup drained crushed pineapple

For the frosting:
3/4 pound cream cheese, at room temperature
1/2 pound unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1 pound confectioners’ sugar

Preheat the oven to 350 degrees F.
Butter 2 (8-inch) round cake pans.

For the cake:
Beat the sugar, oil, and eggs together in the bowl of an electric mixer until light yellow. Add the vanilla. In another bowl, sift together 2 1/2 cups flour, the cinnamon, baking soda, and salt.

Add the dry ingredients to the wet ingredients. Toss the raisins and walnuts with 1 tablespoon flour. Fold in the carrots and pineapple. Add to the batter and mix well.

Divide the batter equally between the 2 pans. Bake for 55 to 60 minutes, or until a toothpick comes out clean. Allow the cakes to cool completely in the pans set over a wire rack.

For the frosting:
Mix the cream cheese, butter and vanilla in the bowl of an electric mixer until just combined. Add the sugar and mix until smooth.
Place 1 layer, flat-side up, on a flat plate or cake pedestal. With a knife or offset spatula, spread the top with frosting. Place the second layer on top, rounded side up, and spread the frosting evenly on the top and sides of the cake. Decorate with chopped walnuts
It is addictingly delicious!

I made Mexican Pork Chops with boneless pork chops, baked with a mixture of rice, tomatoes, peppers, onions, corn and kidney beans. Yum!

So I saw the surgeon this evening - I won’t be having my left knee replaced until I’ve lost at least another 40 lbs. Just as well, I guess. I have mixed feelings but I know it’s the right decision to postpone a few months.
