I made my deadline yesterday! Work has been rough for me lately, but not as bad as some of you. I can take it easy for the next two days, thank Og, unless someone dumps a project on me. Which they probably will. <sigh>

I made a decidedly unhealthy dinner last night, but it was delicious! King Ranch Chicken is cheesy, spicy goodness on a rainy night. I made a salad to go with it! :wink:

And here I am, just a couple of days from closing an account because of impending **underdraft **fees.

I’ve been with that bank for 11+ years. It’s coded as an employee account, even though I haven’t worked there for ten years. (Not that this gave me any particular benefit - most banks do (or did) free checking with direct deposit) But, as the race for the customer’s dollar continues, they’re imposing a minimum balance of $3500 or an $18/month charge.

Screw that! As soon as the check clears and the balance is zero, that sucker is going to be closed.

It’s not so much of a recipe as general guidelines. Let’s see…
Asian noodles
Boil some whole grain pasta. I prefer linguine, but rotini is good too or soba noodles if you want to be more authentic (not that anything about this is remotely authentic).

In a large skillet, saute any of the denser veggies like carrots, tossing in bell peppers just for a couple minutes. When those are almost ready, add any other veggies you want. I like to throw in frozen (without the shell) edamames, snow peas (frozen is great here too), waterchestnuts if I have them on hand, maybe some bean sprouts, and maybe shredded cabbage if I have that. I always try to include shredded carrots, peas, and edamames (for protein), but other than that, all items are optional depending on what you have available. Not so optional are some green onions/scallions although I did use regular onions last night 'cause that’s all I had, but it wasn’t as good.

Make the sauce in the skillet with the veggies at the end: Add 2-4 Tbsp cider vinegar, a whole lotta peanut butter (the natural kind with just peanuts and salt in it is better here) like 1/4 to 1/2 cup, some sweetener - molasses is good - usually around a Tbsp, and a bunch of soy sauce. Add some sort of hot sauce, just a dash of Sriracha is good or more to taste.

Toss the noodles with the vegetables and sauce. At the very end, right before serving, add some sesame oil (just a little… this stuff is strong!) and a bunch of chopped cilantro. These two items add a lot of flavor so don’t skip them. Some peanuts on top are very nice too, but we didn’t have those last night either. Most things are optional in this recipe, but I do recommend having the scallions, the sesame oil, and the cilantro because they really bring the flavor together. And obviously the PB is necessary for peanut noodles! That’s it.

Re: the baby blanket - this was the pattern that I asked for help on a while back in terms of following a pattern. I ended up using FCM’s idea of making flash cards for each row and then just flipping through as you work each row. That worked great. So thanks for the idea FCM! Home. Pooped. I’ve got 2 Krab quiches in the oven - they’re smelling yum! I jazzed up the recipe with mushrooms and onions, too. Hope it gets done soon - I’s hongree. The Rec committee had a soup sale at lunch today, and my idiot team leader scheduled a meeting for 11, and by the time it was done, all the soup was gone. :frowning: I had to go to the snack bar to get a sammich. I wanted soup, dammit!

In other news, we got a new fishlast night. We had him about an hour. The lion fish ate him - $35 gone that fast! :eek: So we’re going to try to trade him back to the fish store. He’s gorgeous, but we can’t have him eating the rest of the tank denizens. Stoopit fish.

Oh yeah, and I’m going to Jacksonville in April. My training was approved. I get to learn all about ports and stuff. And see some old friends. yay!
