Recipe ideas needed for Goat Chops

Have a pair of bone-in goat loin chops that I need to cook this weekend. The chops are probably 3/4lb each and thick cut.

Having never cooked goat, I was wondering how best to prepare them. I was thinking of simply grilling them, but do they grill like a steak? Do I cook them rare or to a higher temperature?

Seasoning, cooking suggestions appreciated!

They might be too tough to just grill as is. Perhaps grill roasting would be a good idea, but I would braise them in roasted tomatoes, poblanos, onion and garlic.

Then shred em and serve in tortillas with pickled onions and jalapenos.
