Route 101-Herb Alpert is really about driving and does the trick for me.
I have always thought that “Time to move on” by Tom Petty is a great driving song. (sorry - found no link)

Some of my favorite “top down on the convertible” music is from an album by Stan Getz. He plays the music of Tom Jobim. It’s all bossa nova. Very light and jazzy saxaphone. Timeless recording.
