I added it to some beef stew I was making in my Instant Pot on Monday evening. Otherwise, it was good.
I’ll stick to the Ro-Tel with jalapenos from now on.
Is this just rebranding? I was looking to buy a can of “Hot Ro-tel” the other day and all they had was “original” and “habanero”.
I’ll try the habanero next time. I like spicy.
They’re great for spicing up your queso.
I’ve never used the Ro-tel mixed cans, although they’re sporadically available in my area. Is there any advantage over putting your tomatoes and your chiles into the pot separately, like God intended?

AFAIK, no, but it gives you a head start on taste.
I use Ro-tel for two reasons:
1.) Convenience
2.) Ro-tel chilies have more kick than the regular canned chilies.
^^This. Ro-tel is perfect for on-the-fly applications. Need queso for the game? Ro-tel is the answer. That tortilla soup lacking some zing and dinner is in 10 minutes? Ro-tel. We always have a few cans around, and they get used.
The main convenience is not having to chop up fresh peppers, which can be a painful experience if you aren’t careful.
I throw a can or 2 in when I make pintos from dry beans

Update: I found a small container of the tail end of that beef stew - mostly rutabagas - in the back of my fridge, and had it as the vegetable for dinner. I scraped off anything green, by which I do mean peppers and not mold, mmmmkay, and finished it. That had a bit of a kick but nothing like the OP.
I bought what must be my first can of Ro-tel, with habaneros, after reading this thread. I’m not sure what to do with it. I’m not really into queso. Could it serve as a stand alone salsa?
Make Tortilla Soup with it. That’s our favorite use for the remains of a rotisserie chicken.

Indeed. I’ve never bothered learning how to make genuine queso, because Ro-Tel dip is too easy. Since the habanero version came out, I want nuttin’ else.
