Last night I ate dinner at a really nice restaurant, and the bread they served was a Rosemary bread. I’d love to try to make this at home. Anyone have a favorite recipe for this?
I usually just make my regular white bread, and toss in a teasppon or so of dried rosemary and a half teaspoon or so of Italian Seasoning. If We have fresh rosemary, I’ll use that, but dried works fine. Add it when the machine beeps, or after the first rise if you do it by hand.
This is a very fast yeast bread. Makes 1 loaf:
1/2 cup milk
1½ tablespoons sugar
1 tsp. salt
1 tablespoon butter
1 package yeast
1/2 cup warm water
2¼ cups white or whole wheat flour
1/2 small onion, minced
1/2 tsp. dried dill weed
1 tsp. crushed dried rosemary
Scald milk and dissolve the sugar, salt & butter. Let cool. Dissolve the yeast in the warm water and add to the cooled milk. Add flour, onion and herbs and stir well. It will be sticky! No kneading required, but mix well.
When the batter is smooth cover and let rise until triple in bulk–about 45 min. Punch down and stir vigorously for a few minutes, then turn into a greased bread pan. Let stand in a warm place about 10 minutes, then bake at 350 for about one hour. (Smells fabulous while baking.)
I have used this as a turkey stuffing. I have also made it without the onion, when someone was coming to dinner who disliked onion–but for those who don’t object to it, the onion is minced and just disappears into the batter. The prevailing scent is rosemary.
Here’s a rosemary/dill/onion bread recipe I posted previously, but I forgot to include the butter (1-1/2 T, melted and added to the milk). I can’t show up for Thanksgiving anymore without that bread. It’s also great if you add a bit of parmesan cheese.
Here’s a recipe for rosemark focaccia. You can leave the olives off if they’re not your thing.
I make a focaccia with rosemary with a recipe from the Cook’s Illustrated book of Italian Classics that is UNBELIEVABLE. It’s airy, and crusty, and soft, and salty. Best bread recipe I’ve ever made. If you really want it, you can probably get it using a free trial at their website.
