Searching for a long-lost sandwich-- omelet sub with cucumber slices

Long ago (50+ years) in a galaxy far, far away my family lived in Niagara Falls, NY. My mother and I used to go to a sub shop and get a sandwich that I’ve tried to recreate without success. It was on a sub/hoagie/grinder roll–an omelet that was still a little creamy in the center topped with thin cucumber slices. I think it had a mayo-based dressing. Nothing else on it. I don’t think the roll was toasted. The combination of the warm, creamy omelet and the ice-cold crunch of the cucumbers was divine.

I don’t know why I haven’t been able to make it, because it sounds so simple. The eggs don’t come out right. The roll and dressing are wrong. Maybe it’s just that my pre-adolescent tastebuds were easier to titillate than these old, worldly, worn-out ones.

Has anyone had a similar sandwich? Or can you give me some tips on making one?
