I Googled and only found instructions that say to fry frozen seasoned curly fries. What I’d like is to know please, is what seasonings to combine to season the fries myself?
Going out on a limb here, I’d say paprika, garlic powder, onion powder, salt, pepper and MSG. Most “seasoned” fries have those in them, and I’ve been moderately successful making oven seasoned fries with this. If you’re going to use the MSG, though, it’s best to dissolve it in water, add the other seasonings, then coat the potatoes.

I was going to say use either Lawry’s Seasoned Salt or Spike.
I would WAG that you can create a perfectly acceptable dish of curly fries without using a bit of MSG. Most curly fries I’ve encountered ( and I do consider myself to be a bit of an afficionado here, I’ve catalogued and ingested a bit over 31,000 different brands of curly fries ) seem to have an undercurrent of cajun to them.
Even the most benign are endowed with a subtle zing. I like False_God’s spice choices, but I’d take out the MSG and put in a light sprinkle of a cajun pepper kind of thing.
An equally important question to satisfy Abby’s quest is this: HOW does one make a curly fry curl???
Now I’m hungry. Hmmmm.

’tooni, about halfway down on the page above is a picture of an apple peeler/corer. The text says there’s an attachment for the thing one can use to make curly fries. Kinda neat, if it works as advertised.
I also recall seeing a device that looked and operated like a meat grinder, except that it could handle potatoes and make regular as well as curly fries. For all I could find on the 'net, though, I may as well have hallucinated them. Oh well.
