I’d say go for it. They’re quick, cheap, and usually good enough. Around here the SuperAmerica stores are known for their SuperMom offerings, and some of them are quite elaborate, more than just some ham on a bun. For the OP’s sake: I sometimes get their egg salad sandwich and a chocolate milk to go with it. Quick and cheap.
The best place to find hot dogs or bratwurst are at a gas station; they aren’t offered too often at fast-food places. Just make sure they haven’t been on the rollers all day.

But seriously, I eat double cheeseburgers from the gas station all the time and they're yummy. I avoid the roast beef because it's a misleading pile of meat right under the plastic but none inside the bun.Stop it. Just for once, stop it.

the 7/11’s and ampms here have sandwiches that aren’t bad but you do get the feeling that the burgers aren’t 100 percent meat tho
although be careful about the big 7/11 taquitos … theres one that’s so spicy its been know to send people to the er …
My SIL, wannabe chef, claims he’s eaten in gas stations in nine states. He says it’s the danger he likes, you know a sense of adventure in your boring travelling. He’s never been sick that he tells about.

I know this is going to sound a little stupid, but there’s a few really great eateries in gas stations out there. One of the more famous is Oklahoma Joe’s (well, now it’s just “Joe’s”) in Kansas City, which has some of the best barbecue in the city (many would say the best.) There’s a few more I’ve come across in my travels, but that’s the one that sticks out in my mind. The only problem with gas station food is that it’s usually bland. There’s no dice-rolling about it 99% of the time. It’s the same sort of plastic wrapped sandwiches you get down at the 7-11 or Walgreen’s.
I used to live near a gas station that had a Chinese takeout joint in the same building. It was a totally separate business but it certainly looked (and felt) like you were getting Chinese food from a gas station.
I was in New Orleans last fall for a wedding and we were staying in a house near Louis Armstrong Park in Tremé. Near the house was a gas station that had fried chicken and po’ boys. Very late one night we stopped in on our way back and got food there. Granted, we were lit the fuck up, but it actually wasn’t that bad.

Joe’s (original) location is a *former *gas station. You can get gas there, but not the kind you run your car on. It is very good - but I’ll personally take Rosedale.
Our favorite donut shop (Lamar’s) also was originally housed in a former gas station. The ‘old grease’ jokes were obvious and popular. Lamar’s was (alas) franchised and never quite the same after.
We have Subways and Church’s chicken in gas stations here. In rural west Texas, you might not find a place open to eat after 6pm that’s not a Stripes or an Alon convenience store.
But I wouldn’t eat egg salad on a bet under any conditions. If I’m going to get a pre-made sandwich, I’ll stick with lunchmeat. Not tuna or chicken salad.

I understand the food service in the gas station in Lee Vining, Ca. is the best place to eat in the whole town.
Wait, the Shamrock station isn’t functional? I could have sworn it was still in use, but I guess I must be misremembering, unless we’re talking about two different places. I’m talking about the place on 47th Avenue. There’s a couple pumps out in front, and looking at Google Street view, there is a appears to be a car getting gas from it, and there are current gas prices on the marquee.
I assume therefore we’re not talking about the same Oklahoma Joe’s location? Or are the pumps and prices merely decorative to add to the “ambiance” of the place? Have I been suckered in by the marketing?
Well, color me embarrassed. I’ve eaten there a couple of times, and I always assumed the gas station was fake. However, that appears to be wrong.
So I can get both kinds of gas the next I’m there! Although with KS gas taxes being higher than MO, it’s generally worthwhile to buy my gas across the state line.
