I just grabbed a random yogurt from the fridge and it turned out to be an unfamiliar brand called Siggi’s. Oof, this stuff is bitter…is my palette too unsophisticated, or will it grow on me, or what?
Huh. I’ve never tried it, just read a couple articles about it at Slate and Chow.com - it is nonfat, and apparently compensates with a lot of sugar, so I’m surprised you landed with bitter. What flavor did you get?
Blueberry. The label says it’s flavored with a touch of agave…most definitely not too sweet.
Skyr is more of a quark, I’ve found. It’s quite a bit more bitter than regular Finnish quark, and a lot more low in fat, so the bitterness comes out more.
No, you’re not unsophisticated. The brand of Skyr you get in Iceland (Skyr.is) is worlds better than Siggi’s. It doesn’t even taste like the same food. I ate Skyr almost every day when I was visiting Iceland, I can barely get a spoonful of Siggi’s down. It is very bitter and doesn’t have any of the flavor you find in Skyr in Iceland.

Skyr, considering the fat content and level of protein is literally a miracle of dairy. You should thank the Icelanders for creating this.
ps, Siggi’s is just fine. (I like plain, but the orange ginger is pretty good.) skyr.is I have found to be a less tasty product, but perhaps it is my American dairy palette.
I quite liked the orange and ginger one I tried and since the berry flavors didn’t really taste much of anything, that’s the one I’ve stuck with. Generally I won’t like a food if it’s too sweet, so Siggi’s bitterness is a plus for me.
My son and I tried this brand recently, blueberry flavor, and did not like it at all. The texture made me think of “blender’ed” cottage cheese. My son said it felt like someone had put a purple sweater on his tongue. Yeah, true. I never liked Skyr as a kid though, so maybe I’m no judge. My sister tried it too, and she says it’s not as good as the stuff our Mom used to make.
