Simple food combinations that really work

Cottage cheese and A1 Sauce is even better. And since we’re talking about cottage cheese, one of the earliest comfort foods in my memory is cottage cheese and applesauce. I prefer large curd with all of them.

Cottage cheese with chives mixed in. Someone, Knudsen, I think, used to sell this combo, along with cottage cheese and pineapple pieces, also good.

Apple slices in lemon or lime juice. Tastes great and prevents apples from turning brown.

OK, my keyboard is getting soaked with all the drool now. Great stuff folks - and I’d have never dreamed of many of these combinations - can’t wait to try some.

Rosemary and chili are awesome together on lamb or potatoes.

When I fry eggs or make an omelette I usually chuck some chopped chili in the pan with the oil/butter. Sometimes I serve it with a dipping sauce of fish sauce and chopped spring onions.

My favorite sandwich is mashed banana with a little lime zest and chili jam. Sometimes with peanut butter too.

If I have dessert it is usually just plain Greek yogurt with almond meal and unsweetened cocoa mixed in. Sometimes half yogurt and half cream/cottage cheese if I have any around. The almond meal is a great addition to a chocolate protein shake too, makes it 100% more satisfying.

Bacon and dates.

Rehydrate dates in warm red wine if you can’t get fresh. (and if you can’t get fresh with a date, also try red wine - - BAM!)

Wrap the dates in pancetta and grill over charcoal or wood until crisp – just a couple minutes a side, maximum. Use a single toothpick per date or skewer them all but don’t crowd the skewer.

I’m fond of peanut butter (crunchy only) with honey. Also like crackers with honey and sharp cheese. Yummmmm.

Apple wedges dipped in honey.
Guacamole on a burger.
Fried egg on a burger.

Hot cross buns, lightly toasted and buttered, filled with mature cheddar and strawberry jam.

Garlic and anything.

Or French fries with gravy. I hated mashed potatoes as a kid. Whenever my mother made hot turkey sandwiches or I ordered one when we went out to eat, I always got French fries instead. I’d dunk them into the gravy like ketchup. There’s still something very comforting to me in not getting the sharp acid of the ketchup; ergo, if I ever do order a hot turkey sandwich, I still get French fries with it.

If you use bacon, partially cook in microwave first. Otherwise, the edges will burn before the whole slice gets fully cooked. Just did this last week.

Also, tuck a piece of jalapeno inside the date before you grill.

Or just garlic. I’ve recently been snacking on roasted, pickled garlic.

Yeah cheddar and jam or cheddar and fruit cake. And blue cheese on McVities HobNobs.

Guinness beer with a piece of chocolate cake and a scoop of vanilla ice cream, all in the same glass. We call it a Guinness Float and it looks nasty, but tastes heavenly.

Omelet with swiss cheese and chopped scallion. I would eat this every day for the rest of my life if I could, side of buttered Italian bread, toasted. American cheese, velveeta cheese, cheddar, whatever - all good with eggs, but swiss is special.

Peanut butter and Kosher dill slices.
P’butter on both sides to minimize soggy bread.
Pickled Jalapenos work, too.

Cheez Whiz and raspberry jam sandwiches.

We went to a new Mexican restaurant a couple of weeks ago. In addition to the (fresh!) chips and salsa, they brought a little bowl of fresh coleslaw. Ever used a fresh warm corn tortilla chip to dip into coleslaw? It was a revelation.

When I was a kid I would mix apple sauce and ketchup for my french fries.

Now I prefer mayonnaise.

Fig butter on smoked gouda.
