It’s Emeril’s house seasoning. It’s also the name of one of his shows on the Food Network. “Emeril Essence Recipe”. You can also buy it at stores.

Liberal, this is one fine thread and I don’t want to hijack it or even start up another that references it as a starting point, but I see so many “additional items” beyond your original menu that I would love to see another thread devoted to “unusual” items seen on a Meat And Three list. Places like Cracker Barrel always have some oddities, but those unique Greasy Spoons and Gag’n’Puke places often have things that no other joint would even consider serving, some of which are out of this world.
None are hopping to mind at the moment, but I bet they would if a thread asked for them.

There’s a little hole in the wall place down the road a piece from me called “Southern Recipe” which has meat ‘n three. Originally the resturant looks like it was a Hardees. They have the patio and a drive-thru window they don’t use. They have a very large variety of meats and sides, mayhaps I’ll nip on down there for lunch and pick up one of their menus and transcribe it. Seein’ as how I’m in Texas they’ve got a good amount of Tex-Mex on the menu. A chicken chimichanga with pinto beans 'n pork, glazed baby carrots, Spanish rice, with a cup of broccoli cheese soup, chased with apple cobbler and sweet tea. Sounds good to me.
