OP, did you ever manage to find the necessaries to make haggis? You could do that…

Ancestry.com is offering free searches of Irish records. Might be fun. (You need to sign up & remember to sign off to avoid charges; but I’ve kept my membership from an earlier “free” offer because I’ve found some interesting stuff. And have some elusive ancestors on this side of the ocean.)

Here in Houston, the first crawfish boils begin around St Patrick’s Day, although it’s a bit early. And it won’t be oyster season here much longer…

Anyone else having trouble getting canned corn beef this year? My wife has made boiled dinner every St. Patrick’s since forever, now you can’t find the stuff.

No corned beef nor cabbage here, but I’ll be making a Beef and Guinness Pie. Served with more Guinness, of course. I’m looking forward to it already.

A plate of muffins with some sort of greenish topping has appeared in the office kitchen this morning. They look rather gross actually.

So what’s the best way to prepare corned beef & cabbage? I am always disappointed when I make it at home. My mom’s always came out meltingly tender, but she’s not around anymore to tell me how she did it.

There was some kind of setup where some part of the whole shebang was steamed. It seemed very confusing.

So - how do you turn out a nice tender corned beef brisket for dinner, with at least cabbage alongside. My mom included carrots and potatoes. I love me some turnips…

I just got my belated anniversary present, a sous vide and they have a recipe for doing corned beef, so it is currently simmering away - though it will be done for diner friday, not tomorrow. Tonight is bacon version of boiled dinner.

And yes, you simmer it for 48 hours. Everything I found online indicates it won’t kill us, but the food safety training I did is currently screaming at me :frowning:

Except that haggis is firmly, without any ambiguity, Scottish, and not eaten in Ireland to my knowledge except perhaps at a novelty Burns Night dinner.

Boxty IME is basically leftover mashed potatoes, with some grated new potatoes, and then some butter and cream and an egg or two. Perhaps some minced sausage or ham or leeks if there’s a bit left over in the fridge, but that’s not regulation. . .

Never did. But I have three cans of haggis in the cupboard. :slight_smile:

I slice a corned beef brisket into five or six large slices, put them in a crock pot, cover with water, and cook on high for six to eight hours. A half hour before I’m ready to eat, I cut a cabbage into wedges and put it in the pot. Sometimes I’ll put in some potato wedges and carrot stick segments as well.

Oh – I think dinner tomorrow will be leftovers of some sort.

I had every plan on making a big pot of spaghetti and some meat sauce. But when I went into the store tonight, my Irish heritage apparently seized control and I ended up buying all the makings of a boiled corned beef dinner.

You know, all this time I thought American corned beef was the same as ours- gross, gelatin covered stuff in tins.

Now I discover American corned beef is salt beef- much nicer!

For any reason, I got into the habit of making latkes. Also a interesting and testy traditional Irish dish I have also made before is sort of a casserole with a layer of mashed potatoes with salmon. I am also like to eat potatoes with cabbage in a crockpot for my proper style non-meat eaters in bunch.

Despite my Irish heritage, I don’t care all that much for corned beef; certainly not enough to go to the trouble of cooking one properly. And I don’t like cooked cabbage at all. So I’m making a nice meatloaf for dinner tonight, with mashed potatoes and gravy, baby peas with pearl onions and mushrooms, yellow and white steamed corn. I will, however, as a nod to my dear departed mother, have an Irish coffee for dessert. :slight_smile:

Well, here it is St. Patrick’s day, and I’m on day four of the stomach flu. Bilge! Maybe I’ll get brave and try some oatmeal for dinner. . .

I just throw cabbage and meat into the crock pot and cook it all day. Never heard any complaints,
