I do love the fall days when the temp drops like a stone one day over the next, if makes hearty food taste so much better. Today was 75, tomorrow is going to be 45 here is southeastern Michigan. So I am prepared with the first braise of the season. Got some hunks of Pork Butt marinating in an adobo I made tonight out of dried hot Hatch, Ancho, Guajillo, and Chipotle peppers, plus the usual spices. Tomorrow gonna be some nice Adovada, I can’t wait for.
Oh, yeah. It’s what I like most about autumn. Once the heat subsides, it feels like coming back to life. Renewed appetite and clearer thinking, too. I see that the word estivation (opposite of hibernation) would be a good metaphor.
My latest high-calorie obsession is stewed chicken in a sauce made with fried bread, boiled-egg yolk, almonds, saffron and chicken stock. The hardest thing about it is not blowing through an entire loaf of bread just sopping up the sauce.
Try eating that in the summer heat and, I don’t care who you are, you’re going down for a stupid, sweaty nap!
