I remember hearing the story in various incarnations, but does anyone have the straight dope?

The only ‘decent’ reference I could find was in this article

Harrison was also miffed after hearing rumors that Seagal had allegedly hurt several stunt men on the sets of his films in retaliation for an incident that reportedly involved Seagal and martial artist/stunt man Gene LeBell.

Rumour discussion 1.

Seagal claimed to be able to escape from any hold applied by anyone.Gene was a stuntman for the film. Someone asked him over.Gene put a rear naked choke on Steve,and Steve crapped his pants as he passed out.Other versions of the story make it into a challenge match,etc.

Rumour discussion 2.

…how stuntman Gene LeBell once choked Seagal unconscious during an aikido demonstration…

I don’t know if this is any good to you though, CheapBastid. Seems pretty much to just be part of the rumourmill.
