I’m pretty sure they still have the wells because they aren’t always in an area with fresh water, but it still needs to be boiled. That’s part of the “surviving” aspect.

The one camp dynamic gave the producers some incentive not to give the players flint/potable water (while giving them chickens) at the start, thus encouraging some of the fireworks that we saw.
If they did not have ready sources of fresh water in the locations these shows are shot, we’d see a hell of a lot more illness and dehydration. Hell, people get sick drinking tap water at resorts in Mexico.
