Holy cow, I may actually have kittens by Labor Day.

Last month, one of my fellow UUs mentioned his family had a litter of kittens. They were keeping two and finding homes for two others. I oohed and aahed over his videos and said, “hey, if you can’t find homes for them, I’m getting a place in September, and I could take them.” He had kind of a “yeah, that’ll happen” reaction, and I didn’t see him the rest of the month.

This morning, I got an email asking me if I’m still interested.

One’s a tortoiseshell, and the other is black.

OF COURSE I’M INTERESTED!

Good Morning! Slowly making progress on the moving thing… Slowly. My goal for today is to get the downstairs bathroom packed & cleaned & do some more stuff on the kitchen, make a grocery list for tomorrow & anything else I can manage to do. I hate moving.

I have successfully connected to the new internet modem and wireless router. It was relatively painless. I still need to connect Vonage and the Roku, but hopefully those should be quick.

Waiting for the last file to upload for the previously mentioned work silliness. Actually managed to get to work early - would have been earlier but I had to get gas first.

Blurf. Someone hided my coffee this morning. I’d just made it, went outside with the animals, hung out there for 20 minutes, came back in and it was gone. Searched everywhere!! Gave up, made more coffee. And of course right then is when the CoffeeGnomes decided to return my coffee to my desk. Under one of my SHELVES on the desk, of course. They are trying to confuse me!

So now I have two coffees. But not for long, muahahaha!!

Irk is irkin’ me somewhat today. Over the weekend TPTB “fixed” the website. So today, stuff would not work. Quelle surprise! After doin’ a little “fixin’” of my own stuff now works like it’s supposed to work. Mind you it’s not like that is anything wonderful but we deals with what we gotta deals with. At least I’ve been able to do irk stuff. Irky irk stuff. Irksome irky irk stuff.

Isaac ignored us. All this promised rain has not happened. Thus provin’ that by doin’ yahd irk I can change the weather. I feel so powerful! :smiley:

Still no weather happening in Baton Rouge. Got word that my university has cancelled classes and all activities for the rest of the week. Weather people keep saying that once it gets over us, it will hang around for a while. I’m already bored!!!

Yay for the new apartment & possibly kittens for 'Roo, and congrats to Mmmms on US citizenship! And yay for the schnoodles, though hoping that Mickey will be okay, Sticky.

The eggplant parmesan, healthier version, turned out delicious! So, here is the recipe (which is kinda made up by me, from several that I saw online):

Need: 1 or 2 medium to large eggplants (you can peel them or not, your preference)
panko bread crumbs, a couple of eggs, beaten with @ tablespoon of water.

Preheat oven to 375 F, spray baking sheets with cooking spray
Slice eggplant into slices about 1/4-1/2 in. thick, dip in egg mixture, then dredge in panko bread crumbs (I suggest using a ziplock bag - less messy!). Bake them at 375 for 30 minutes, turning once after 15 minutes.

You’ll need at least 24 oz. of tomato sauce - I used some spaghetti sauce straight from the jar. But you do need a big jar (the really big jar, actually LOL).

Cheeses: ricotta (I used the part skim one), the bigger container if you like it cheesy, or the smaller one if not. Mix in 1 beaten egg, Italian spices of your liking (basil, oregano, parsley), a little salt and pepper and about 1/3 cup of freshly grated parmesan cheese.

I used a 9X13 glass dish, and started with a layer of sauce, then a layer of eggplant slices, then the ricotta cheese mixture, followed by a light sprinking of shredded mozzerella cheese, then more sauce, eggplant, and so on. You should have at least two layers - that’s enough, really. End with a layer of sauce, mozzerella cheese on top of that, and about another 1/3 cup of the parmesan on top of all of it. Cover with foil and bake at 375 F for about 30 minutes. Take off the foil and bake another 10 minutes or so, until the cheese browns some more.

Mine was not saucy enough, really, but it tasted sooo good. There were NOT any leftovers,and I was sad about that. But it will definitely be made again, probably next week!

Whew … I’m pooped. I was pooped after putting all that together (the eggplant bath was very messy LOL I did NOT use a ziplock bag!!! Need I say more? :)) I hope everyone is enjoying their week. And more pet tales, please!! :slight_smile:

This evenin’ has been a whirlwind. I got home from irk to a message about someone goin’ to the hospital. Y’all may remember the older gentleman I’ve talked about who I give a ride to men’s night over at the church house from time to time. He’s the one in the hospital. He had quite a bit of fluid buildup in his lungs and was havin’ a hard time breathin’. He called his daughter who called the EMTs who were there lickety split to get him to the hospital. I went there this evenin’ and he was his chipper, talkative, funny usual self which made me glad. He says his breathin’ is normal now after treatments to get rid of the excess fluid but now has to take coumadin so he’ll be there a few more days while the doc gets the coumadin levels adjusted. He told me his wife, who is on some high powered meds herself, slept right through it all and did not know he was gone until their daughter woke her up after eight a.m. to get her mornin’ meds. So that’s been my evenin’.

BTW, the cafeteria at the horsepistol has some pretty decent food. We grabbed a burger from there and it was right tasty. I was surprised by that as I was hongry and obviously home cookin’ did not happen. OYKW came by after irk to check on Jim as well. Thus we dined on cafeteria horsepistol cuisine.

Now I shall go lie upon the bed and watch some teevee for a bit. I’s tahrd!
