I made oatmeal cookies with mini Hershey’s kisses. I stuffed 'em full of kisses, so they were really chocolatey. Good stuff!
Here’s the recipe–just use dark chocolate mini-kisses instead of chocolate chips (if you can find them), use about twice as much as it calls for, and stick a few extra chips on top of the cookies before you bake them.
I think they taste better if you make them extra big (but big cookies do take a little longer to bake).
Oatmeal Coconut Cookies
1 cup butter, at room temperature
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp vanilla extract
2 cups flour, sifted
1 tsp baking soda
1 tsp salt
2 cups quick oats
2 cups coconut, or 1 cup coconut and 1 cup chocolate chips
Cream together butter and sugar. Mix in eggs and vanilla. Stir in flour, baking soda, and salt. Stir in oats, coconut, and chocolate chips.
Drop big spoonfuls about 2 inches apart on a greased cookie sheet and bake at 350 degrees F until golden brown, 10 to 12 minutes. Don’t bake too long–they’re better if they’re a little squishy in the middle.
So, taxi, where’s the recipe for the butterscotch cake?
I’m having a really hard time deciding what to bake next. I just got a recipe for ginger scones that sounds really nummy, or I could make more cookies, or an upside-down chocolate cake. Whatever shall I do?
